Slow cooker chicken curry from SFI Aug 2013 edition.  This meal went over to Melbourne with me for my SIL but ended up coming home as he is allergic to peanuts & I had used peanut oil.  I forgot all about his allergy so when DD questioned the ingredients I had to pm Trudy and ask her to send me the list of ingredients from her copy as I made it back in August for CC's visit and I couldn't remember what was in it.  Sure enough, peanut oil had been specified and as I have it in the pantry I knew I would have used it.  Not much point leaving it with DD as she is vegetarian.

Whatever was for dinner last night made in to a lasagne.  DH is a good cook but at the moment he is stressed and time poor so made what I think was chicken and beans in romesco sauce last night, then he chucked some extra veges in the leftovers and made it in to a lasagne with a blue cheese sauce.

Nicer than it sounds.

Life should return to normal after 18 November. I'm counting the days

Steak, roast pumpkin, roast smashed potatoes and cheesy cauli bake from Alyces (with broccoli added), followed by leftover sweets from Melbourne cup.  I do feed 2 little ones plus DH plus 3 backpackers, so lots of food is needed.

Dining alone tonight as DH is at a function so something simple for me either a cheese and mushroom omelette or smoked fish cakes from the freezer with salad.. Too easy  :D

Last night I made Dutch beef Kroketten (croquettes), using a family recipe.
Was quite laborious, but tasting them took me right back to my childhood  8)
Firstly you pressure cook the beef in stock, black pepper, mustard powder, vinegar, Worcestershire, bay leaves, cloves & dried onions.....then shred, then make an onion roux, add the beef, shape, chill, crumb then deep fry!
Not a quick slap up meal, probably why I have put it off.....but I did finally get to use my croquette press, I bought from Holland....worked a charm  ;)

Add your warm beef mix



Squeeze, and presto...perfect sized croquettes



I chilled them in freezer for 1/2 hour, then cut to size, crumbed then fried.
traditionally fine bread crumbs are used



And I tested them with panko crumbs, which we all preferred better with extra crunch
