I used to do that with all the flaps and bits and pieces when I bought sides of lamb many years ago Wonder, nothing as modern as souvlaki though - just shepherd's pies or extracted the meat to serve with gravy and roast vegies. I always thought of it as a 'free' meal as most people I knew just gave it to the dog or binned it as they couldn't be bothered.
If you were lucky you also got the kidneys and liver.
