I opted for a Gourmet Traveller Slow Cook book when I subscribed. Lots of nice recipes.  Made this one with lamb ribs that I bought at the Kyneton Farmers Market. Used home grown toms in sauce and home grown Zuchinni. Made sauce in TMX and cooked all in mini SC.

That looks so yummy Chookie and I'm hungry. The weather has turned cold and rainy today after some really warm days. I can't stop eating today. I've had porridge for breakfast and lunch plus 3 pieces of fruit. Trying to keep it healthy but am having cravings for anything deep fried and salted.

Not much here tonight; I have taken some sausages out of the freezer (gourmet ones) and will dress them up in some way.

We had Honey Mustard Chicken from the Forum, I double the mustard. Served with Cauliflower Rice p, carrots & Green Beans.

Lemon & asparagus Couscous salad

OK so this gastronomic delight came from another website so I can take ZERO credit for it unfortunately  :o what I can do however is share it and extoll its virtues!

I have included the calorific attributes too as I know that some people like to count these sorts of things. They don't however include the Salmon steak that I selected to accompany this delight  :P.

Ingredients:

    250grams whole wheat pearl couscous
    3/4 lb thin asparagus spears, tough ends trimmed
    1 1/2 cups tomatoes, quartered
    1/4 cup red onion, minced
    1lemon, juiced (and use the zest too!)
    1 tbsp extra virgin olive oil
    2 tbsp fresh parsley, finely chopped
    Salt, to taste
    Fresh Cracked / Ground Black pepper, to taste.

I didn't use the Thermomix for this as I was slightly pushed for time (and ashamedly didn't have time to work it all out) so......

Couscous was added to some EVOO in a heavy pan that was hot. Keep it moving then add 2.5 cups of boiling water then cook as per normal couscous cooking process.

As for everything else - erm well its a basic salad really.

The Salmon fillet was poached as per normal with the asparagus being added towards the end with sufficient time for that too be just the correct side of 'snappy'.

Pictures have been added which contain the salad on its own and then with the Salmon fillet flaked (more like attacked with a spoon & fork).

If you choose to make it, I hope you enjoy it as much as we (yep......MrsRC was there too) did.

Meal Values (if this helps);

Servings: 5 • Size: little over 1 cup • Old Points: 3 • Weight Watcher Points+: 4 pt
Calories: 170 • Fat: 4 g • Carb: 30 g • Fiber: 5 g • Protein: 6.3 g • Sugar: 0.0 g
Sodium: 10 mg (without the salt) • Cholest: 0 mg

That salmon look delicious.
I was going to make minestrone for dinner, but I got home too late, so I improvised with a chorizo sausage and some leftover feta cheese and threw them together into a risotto.
