Hope the link works. I made this yesterday using up 4 salmon fillets from the freezer, I just needed to buy the veg to go with. Such a light but satisfying meal and the sauce was delicious. We've each got another serve to have today and I will definitely make again soon and serve with rice noodles for DH to make a bit more filling, I wouldn't mind doubling the sauce part too as that really made it.

Keeping with using up freezer stock, I also used 4 fruit scones from the freezer (2 Tenina's cherry streudel and 2 blueberry ones) which I pulled into chunks and put into a small baking dish. Used a small pot of homemade unsweetened apple sauce also from the freezer poured on top and heated it in my small oven on low until nice and hot.
I used a custard recipe from rec comm by Thermomumma which was for a thick custard. That was really nice and done within 10 mins. Was lovely poured over the top. Finished off with a small drizzle of raspberry coulis also from the freezer
I had a small serve of this too. I'm using up things slowly but surely.

I love how you are using up the stuff from the freezer. I am also trying but don’t seem to be making much progress. Will keep at it.

JulieO your using up the freezer makes delicious meals. Tonight we are having a chilli chicken stir fry. Its too hot to cook much more.

I've never made spring rolls, I've always thought they would be fiddly. Yours look nice and crispy Chookie.

The Spring rolls are very easy. The secret is to par cook the filling and let it get cold. ( I do this in the microwave) They are very healthy as there is no fat in the filling and only a spray of Canola oil on the roll before AF. These ones contained white cabbage, corn, green beans, water chestnuts, carrot , mushrooms, grated ginger and chicken breast. Can add rice noodles .
