Woolworths March catalogue has a recipe for chicken breast , apple and prosciutto. Might give it a try.

I created a new recipe for Dinner.  It was delicious but not very diet friendly.  I used the light cheesy sauce from one of my previous recipes ( Chicken in light creamy sauce)., mixed it with generous amounts of cooked Zucchini and mushrooms and placed this in the base of a small SS dish.  I then placed thin slices of chicken breast over the sauce base.  I then topped the lot with fresh bread crumbs mixed with Parmesan cheese.  Baked in AF for 15 minutes ( 350 for 10 and 200 for 5). I covered it with foil as the bread crumbs wouldn’t stay in place in the AF.
The chicken was very tender and the sauce delicious. Served with green beans.
As the sauce recipe made lots, I have made another similar for tonight.  Replacing the mushroom and zucchini with cherry tomatoes from the garden.
Still sauce over, so some salmon  pies.

It sounds very tasty Chookie. We are trying a Zucchini slice from the Coles magazine. 3 Cheese and Tomato Zucchini Slice page 20.
We had the Chorizo, Prawn and Pesto Penne last night. Again not very diet friendly but we all enjoyed it. I cooked up the chorizo by itself first and got most of the oil out of it. It’s on page 32.

edited. The zucchini slice was very nice and it is low calorie too.

Thanks for that info Cookie.
I used some of the light cheese sauce and mixed it with a drained tin of pink salmon.  Added some cooked Zucchini and mushrooms.  Made lots of ( 10). small pies in pie machine.  Reheated in AF.  Did try short pastry for base, good. Ate some, froze some and gave our neighbour some.

Sounds like you got heaps of serves from 1 batch of your cheese sauce Chookie. There’s some good recipes in the supermarket magazines, great value for free!

Your dinner sounds very nice Chookie.

GS came for dinner tonight and had requested a chicken pasta bake and a tomato & onion dish.  I did peas and carrots with it.

Fresh whiting and fresh calamari.

Yum yum.
Last night we had Tenina’s Hasselback Chicken which is always nice. Tonight is a creation using chicken, prosciutto and possibly cheese with vegies.
