I made the sauce of this recipe of Chookie’s
https://www.forumthermomix.com/index.php?topic=17592.0
then poured it over some cooked vermicelli egg pasta, a little bit of chicken that I found in the freezer and some peas. What I thought would be 1 serve has turned out to be 3 meals and I’ve frozen 3 small pots of excess sauce for some fish meals down the track, I’ll add some lemon juice to it.

Basic but nice to have something different cookie, pasta needs to be flooded with sauce for me and that doesn’t happen if eating out I’ve found.

Before lockdown we were having some Pastitso from the freezer. I decided we would have that anyway.

This would have to be the best meal I’ve made since experimenting a bit more with once forbidden foods. 1 small piece Birds Eye battered Barramundi cooked for 10 minutes in the a/f, mashed cauliflower with a small amount of potato added and other veg, served with Chookie’s sauce
https://www.forumthermomix.com/index.php?topic=17592.0
which I had in the freezer. I added some lemon juice and Parmesan. It was very tasty and I was delighted to be able to eat the battered fish - 4 more pieces for other meals.

That looks delicious, Judy.
Tonight we had the last of the lamb shanks with mashed potato. Steamed veggies.
Portuguese custard tarts heated in AF.
Made scones which I also cooked in AF.

Thank you ladies, I look forward to having it again down the track
Chookie I wondered if you could reheat Portuguese tarts, do you freeze them as well? When the kids were over last I tried one of those they bought at Costco, I could only eat the tiny bit of custard in them and I didn’t think it was anything special even though those who buy them love them. If they freeze I’d like to make some for when they next come over.

Don’t think they would freeze well, Judy. After about 3 days in a sealed container the custard starts to split. They warm quite well in the AF. The pastry goes a bit soft but sets up ok when on the serving plate. I usually make the custard the day before.
Using my light Mornay sauce, smoked salmon pasta and veggies made dinner for dinner. The dish I bought yesterday for $8 at the cheap grocer. Im trying to reduce plastic wrap, so the lid is handy.
