One friend who visited today brought me some pea and ham soup, I was only thinking I must make some of that soup last night so I was very grateful for her kindness, it was lovely.

Pea soup is one of my favourite soups.  DH doesn't like it much tho.

I bought a rack of lamb on special today so we are having that with all the trimmings.

We love pea and ham soup. We still have a couple of ham bones in the freezer from Christmas.
Tonight we are having a sort of brown non fried rice with hot smoked salmon in it.

Left overs.  Everyone last night loved the drumsticks that I marinade in a diabetic friendly sauce.

You have a new road to travel now Chookie, a diabetic diet is good for anyone - diabetic or not.
I’m really interested in seeing how your recipes change now.  Bet the iPad is getting a good workout.

Steak and salad for us.  I’m also making a corn salsa (Monday Morning Cooking Club) which Wayne loves.  I have cooked the corn cobs and will put the other ingredients with it later.

Yes Judy, the iPad is working overtime . Some changes but not a lot. Watching the carbs and spreading them out during the day.  Exercise more, mostly gardening.  The recipe I developed for  Pizzelles is brilliant and a life saver. I have put it on my Blog but not on the Forum as you need  Pizzelle machine.
Tonight Flathead fillet with new potatoes and salad .

We are having a casserole from the magazine Diabetic Living. I have a few recipes from it that we like. It’s much cheaper if you have a subscription.

Just mushrooms on toast!

Have been making eggplant Kusundi and preserving pears all afternoon.  Also have two buckets of sliced green tomatoes draining for an Italian green tomato preserve.  It takes 4 days before bottling but worth the wait.

I hope you had a lovely lunch Chookie. I hope all the Mums had a special day. We are having roast lamb. Dessert is a Banoffee Arctic Roll. It is a lovely banana icecream rolled in a swill roll that has had caramel spread over it.

Thanks Cookie. We had a most amazing day. DD took us to Harcourt , in country Vic.  There is a Mountain Bike activity Center.  A lovely Cafe who put on a special lunch for Mother’s Day. ( DD is well known there) But what was really amazing was the camping area. There were lots of family groups around camp fires having a great time. All doing thee own thing.
