Last nights dinner was Butter Chicken with veggies steamed in the TM. I am teaching DH to cook, so really enjoyed it! We used Lush paste, they create wonderful Indian and Thai curry pastes.
(no affliation, just a very happy customer )

Brought back some lovely fresh seafood from Pt. Lincoln (in plenty of crushed ice in an esky). Today I made Chilli & Tomato Mussels which we ate with plenty of crusty bread to soak up all the juices.

To all who asked, yes I was in Bremer Bay for holidays. Back home for a week then back to Bremer next monday.
I might just sneak Thermie into my car on the way back. Don't think DH can come as he has to spray.
It's been either too hot or raining.
Out for tea tonight and again tomorrow night for an 80th in Perth. So no cooking!

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

The chicken penne was an adaption of this
simple avocado & bacon fettuccine
I just added chicken a little before the bacon was cooked, and added the semi dried tomatoes when avocado was added.
The beef casserole was from here

JD how did you go finding the brown miso for that recipe? my local Woolies has it but it was white miso. Not sure what the difference is!

I could only find white too LMT (it is brown coloured though) and it did the job just fine.
Can anyone tell me how long an opened packet of miso would last? I have kept it in the fridge but don't know whether to freeze it in ice-cube trays or not.

Judy, freeze it. I also bought some Brown Miso from the Health Food Shop, Will use some for same recipe and make some Japanese inspired broth.
Tonight we are having poached salmon in the Varoma in Lemon and Caper sauce,(posted), with Mock Rice. 2 second salad with Avo folded through. Then a version of Alyce's sorbet with Rock Melon.
Made a smoked salmon spread with 80g of light Philly and 100g smoked salmon, 1 dessertspoon ,= 30 cals.
