Coral trout with veges

Little lemon puddings, with lemon butter.

I decided that tonight would be the night I would put my first post on this thread. So its typical that my dinner isn't turning out exactly as planned :-\

I was going to do a slow-cooked chicken and vegie casserole. But I didn't get home until 1:00pm, and by the time I put the shopping away, had lunch, cleaned up from lunch, threw a load of washing in the machine... :-)) Fair to say it was getting too late to cook the entire casserole in the slow cooker.

So, my last minute plan B: I have put all my soft vegies in the slow cooker and they are simmering away nicely into mush, which I am then going to puree into a sauce. The vegetable mush sauce will then be served over steamed chicken drumsticks, steamed vegies and pasta.

I'll let you know in a few hours how it turns out.

*Fingers and toes crossed*.

I'm having a leg of lamb roasted with Tenina's Lamb Pesto Crustose with Gusto.  I will be swapping a couple of ingredients.  Pretty sure I didn't pick up the pistachios or any lemons when I was shopping last week  :)

We would love a leg of lamb and especially this recipe. Note to self. " put a leg of lamb  lay by  for next month" . That is  how expensive. Lamb is here.  We had a dear friend for dinner this week. He has a farm  near Canberra running sheep. He gets $90 a lamb. So why am I paying  $9 a kilo. I said instead of bringing a bottle of wine he could have shoved a lamb in the overhead locker.

Actually I fed them barramundi at $34 a kilo.  Note to self "stop b****ing about the cost of lamb"

Hi Gert,
Your comment pushed me to work out how much my leg of lamb was. It's a treat for me - I get it frozen and tend not to look at the cost.  So I've looked and it is gasp worthy. Keeping in mind that it's imported from NZ (can't get Aus lamb here -beef yes, lamb no) when I work out the cost per kilo and then translate to AUD it's $17.45/kg.  Let's just say I will be savouring every last bite.  ;D

Roast rack of lamb for dinner tonight with roast veg.  Have just looked at the label and it is $28 kg - ouch.  Just as well we don't have it very often.  We have been away for a couple of weeks without TMX  :( and now I need to make something, anything as long as it is with thermie.
