I am currently on a grain free and sugar free challenge for 30 days. So far so good. Tonight is lamb mousaka and salad.

I bought a gorgeous piece of King Island Eye Fillet today and as I am hopeless at cooking steak in the pan or on the BBQ I decided to sous-vide it in Thermie.  So nice and tender.  Here is a photo of the finished steak.

Wow Vieve, I'm not great at cooking the perfect steak, so I'm interested in your sous vide experience. Do you have the instructions to share? It looks fabulous!

Hi Jamberie,  It was easy.  i found some instructions on the blog Why Is There Air and pretty much followed them with a couple of small tweaks. 

First I put the steak in a zip lock bag and added some truffle infused olive oil, lemon thyme, chives, salt and pepper.  You then need to expel as much air as you can from the zip lock bag.  Whilst the steak is marinating you heat up 2 litres of water (with the internal steamer basket inserted) in the Thermomix for 10 minutes/60º C/Speed 2.  Place the steak in the steamer basket and cook at 50º C/Speed 2.  I cooked the steak for 30 minutes.  Once done I cooked the steak on a hot BBQ to give it some colour and then rested it before serving.  It really was delicious.

How big was your piece of meat Vieve - was it a chunk of fillet steak or just 1 thick piece?  That meat is cooked perfectly for us and I'd love to try it with some I have in the freezer.
