Thanks for that advice Debbie.  Very timely as I am hoping to visit an Indian store adjacent to the Adelaide market tomorrow to stock up on some items.  With me not cooking as much nowadays I was thinking I had perhaps better not get too many packets of spices but after reading your post, I can now make my list to include everything I generally use.  They are so cheap compared to those tiny supermarket bottles or packets.

I got the fenugreek leaves and the tandoori colour. Will marinate the chicken tonight and cook it tomorrow. Can't wait !! No problem about the freezer tip ..... I even have whole cardamon pods in the freezer and they are fine too so you can freeze seeds too. When I made the kfc spice mix I just put the cardamon pods in straight from the freezer.

My neighbour always prefers to buy whole seeds wherever possible rather than ground ones as she reckons often they have dirt and all sorts in the ground ones. Not sure how true that is but I think the spices are better if you grind them yourself in the TMX of course ! I think she roasts hers before grinding them.

I'm really happy as my risotto turned out tonight- the rice really does make a difference. I used an Italian arborio rice that I bought from  Gaganis Bros Instead of Australian arborio rice from the supermarket. I made Marmee's chicken cacciatore risotto and it was delicious as usual.

ES, i always use Italian arborio & thai basmati etc.

I think it makes a huge difference

So do I usually, but I couldn't get the Italian rice and impatiently bought the Australian one. It was terrible in risotto, but I used it up in Bron's garlic rice, and it was fine for that. I will need another trip to Garganis Bros
