For myself I've made a potato, spinach & feta frittata to have over 2 nights (just over 300 cals/serve). DH is having something from the freezer.

I made Maddy!s Chorizo and capsicum risotto. Unfortunately, I had just sautéed the chorizo and I was about to do the next step when I lost my connection to the forum, and didn't have the recipe printed out or in Evernote. I had to wing it as I didn't have the list of ingredients, quantities, or method. As I served it up, I realised that I had forgotten the mushrooms and spinach. I had added zuchhini and peas instead and used less paprika. My family was none the wiser and it is all gone now. I love a happy ending
