We had RTE crispy Parmesan chicken. It is very easy and extremely tasty. We had it with broccoli, kipfler potatoes and pumpkin cooked in a tiny bit of truffle butter.
May all dairy items in your fridge be of questionable vintage.

I cooked chicken schnitzel in the A/F tonight along with a sweetcorn patty I bought at Costco earlier.

Cut down quantities to make 1 serve but added some zucchini and pumpkin. Would make enough gravy for 2 serves next time. Delicious!  Cut veggies a bit smaller and cooked 180 degrees 15 + 15 minutes in the air fryer with basket removed  - perfect. Served with microwaved peas and sweetcorn.

Yum Judy.   Like the way you look after yourself by cooking decent meals.
Real test for our Diet tonight.  GC coming for dinner.
I wondered about starting the diet this month.  We have 3 birthdays and Easter at the end of the month.  But there is something every month so looked at it as an extra challenge.

I just wish I had the time and extra mouths to feed.  Going through my recipe box I’m finding so many recipes I’d love to make again.

We are having SC corned beef tonight, with the vegies in the SC as well. Very easy.

Managed dinner ok last night.  Was able to resist the Cauliflower cheese and pancakes.

I have to start giving some thought to meals for the next few days prior to having a colonoscopy.  There are so many things I am not allowed to eat. :( :(
