I’ve spiralized some pumpkin and will make a Bol sauce and make a tray bake. Might make some more puff pastry spirals with different fillings. Perhaps feta and spinach and spring onion. Will try cooking in AF and also mini pie maker.

AF great for spirals, mini pie maker not.
Made the Bol sauce with Kangaroo mince. Good.
Tonight, chicken in mushroom cream sauce. Will replace cream with creamed Cauli.
The latest fruit loaf I made with Laucke grain mix and added currants soaked in hot water. Dried apricots and walnuts. The bread recipe had some SD added.

I’ve changed my cooking regime. Instead of cooking 4 serves and either freezing or eating the other 2 serves the next day , I’m cooking just enough for 1 meal. I have plenty of time to do this. I am now also freezing food in 1 meal lots. If I cook something in bulk, like Bol Sauce, I freeze it in 2 serves portion.
Last night I cooked a chicken thigh casserole. I used 2 serves of Ratatouille and 2 chicken thighs and popped it all in my small SC. ( then added sliced mushrooms) I steamed potatoes for mash in TMX basket with Brocollini on top in Varoma.
We enjoy variety and now I can try a lot more recipes.
Tonight 2 more chicken thighs, different recipe. Sweet and sour.

I also cook for 4. With DS home most of the time it nearly always goes. Anything left over DS will take for lunch or we have it for our lunch.
A boneless chicken roast with herb & apricot stuffing from Coles tonight. Cooked in the AF. Not sure what veggies to do yet.

If anyone can do that it’s you Chookie, If I go to the trouble of actually cooking a meal I still tend to stick to the recipe or halve it if it’s for 8. So many recipes I come across these days serve 8-10 which is weird. Quick meals are my favourites now and with soup I can cook plenty of it as it freezes so well and gives me variety in my meals. I have a problem with cooking a proper evening meal from scratch because we always had a cooked lunch once we retired so I only want an easy meal for tea.

I always bulk cook. Occasionally I might do something that does the two of us for just one night but most of the cooking I do has to see us through the week so some goes into the fridge and some into the freezer for later on (I think I need a new freezer!).

Nice to see everyone cooks to suit their situation. I have suffered from leftover behaviour from when I worked long hours, full time and with a family to feed. I have been trying to change this behaviour for 15 years. Slow learner.
