Bread to wrap around a sausage?

Hi all,

Recently I was asked to bring bread to a BBQ lunch primarily for a good old "snag in bread". I made an ordinary loaf based on the EDC recipe but added 2 tsp of chia seeds, and increased the time of the first knead to 3 mins and did two rises before baking. Whilst the bread cut really well (no doorstops at all!) and tasted fine, it was a disaster for wrapping around a sausage. Can anyone explain why and provide suggestions for a more "wrapable" bread please?

You might like to try adding a teaspoon or two of natural bread improver. Aim sure others will have opinions.

I've also had this dilemma and have found that the buttermilk bread is the best one for wrapping around a sausage-more flexible and squishy!!

you might need to add some more gluten to it possibly? did you use regular flour or bakers flour?

just out of interest I think that chia seeds are eaten raw??? Isi's Easy Portugese Rolls would probably be quite nice with a snag, and I am sure Chookie has probably got something that would go well

I agree, rolls may be the way to go.
May all dairy items in your fridge be of questionable vintage.

I would use either Isi's rolls or the 'no fuss' ones.  You could use the 'no fuss' recipe and make it into a square loaf,  or even double it if you have a long tin.

Thanks everyone. I do use Baker's Flour (unless recipe calls for something else). I have bread improver so might try that in a loaf tonight.

Will also give isi's bread a go too. I do have a long tin so will try the no fuss one.

Chia seeds can be eaten raw or baked in goods.  For maximum absorption of nutrients though they are soaked in water which makes a gel.   The gel can be eaten straight or used in baked goods (replacing some of the butter or oil) or juices etc.  :)

I've found with homemade bread it's often the crust that is too crusty (!!!) for wrapping around a sausage, so maybe once it's cooled, put the loaf in a plastic bag or container to soften the crust.

Opi,  had exactly the same thought,  but I think I would put it in the plastic bag before it got cool.

Don't put it in warm, it will go soggy from condensation. But putting it in a bag will soften the crust (I work at a bakery)

I tried the no fuss bread last night and used a double mix (nearly came right out of the bowl!) as suggested by Chookie as I do have a long tin. I think my tin would have been fine with a single mix but it is perfect for wrapping around a sausage! I will give it a try with chia too.

i learned today that chia lowers blood pressure. good for me but the friend i learned it form has low BP and nearly passed out after using chia to sub for eggs.... just sharing :)
