Name of Recipe: Easy Satay Chicken Risotto
Number of People: 4-5
Ingredients:1 tin (250g) Ayam satay sauce - mild........you can use hot if preferred
750g chicken breast (or thigh), cut into bite size chunks
1 tin light coconut milk
1 red onion - quartered
good handful flat leaf parsley
1 red capsicum - quartered
2 garlic cloves
30g peanut oil
1 whole spring onion - chopped
2 Tbsp. ketjap manis
250g aborio rice
200g water
Preparation:Add onion, parsley, capsicum, garlic to
& chop 5 seconds, speed 6.
Scrape down jug, and add 30g peanut oil.
Cook for 5 minutes, 100c
speed 1. MC cap off.
Add chopped chicken & coconut milk. Cook 2 minutes, 100c
speed 1.
Snip in the spring onion with scissors, add the rice, water, Ayam satay sauce & ketjap manis.
Remove MC and place steaming basket on top of lid.
Cook 17 minutes, 100c,
speed 1.
Pour into pre-heated thermoserve, and sit 5-10 minutes before serving.

Amy - made this tonight using the Ayam satay sauce. It was great! It made heaps too and I didn't even use the full amount of chicken. I added some peas in the last two minutes just for a bit of greenery.
JD - I made half quantity of this recipe using cooked chicken, roasted red capsicum and some Macadamia Nut Satay Sauce I was given for Christmas - it's delicious and my window cleaner was anxious to try it before he left. He loved the risotto and hearing of all the things the TMX can do.

The risotto turned out really nice. It was quite rich so you definitely couldn't eat a lot of it. Hubby and I were impressed although the kids weren't massive fans. Thank you for sharing, the recipe was very easy to follow and something different to the usual risotto I make.
