Baked Bean Muffins

Baked Bean Muffins - recipe makes 24  from this site (update Nov 2017 - Cheapskates link no longer works)

Preheat oven to 160oC, fan forced.
Grease 24 holes of muffin tins

120g sultanas (I used half sultanas & half goji berries)
250mls boiling water
Soak the sultanas in the boiling water and set aside.

Into the TM bowl place
3 eggs
200g oil (I used grapeseed)
300g sugar
1 tspn vanilla extract
425g can baked beans in tomato sauce

Mix for 15 seconds/speed 6.

Add
290g plain flour
1/2 tsp salt
1 tspn cinnamon
1/2 tspn baking powder
1 tspn bicarbonate of soda
70g roughly chopped walnuts or pecans (opt)
sultanas and their soaking water

Mix for 20 seconds/speed 5.

Pour into muffin tins and bake for 30 minutes.  Allow to cool slightly in the muffin tins then transfer to a wire rack to cool completely.

Denzelmum - Made this without sultana and only 250g sugar.  Very light and moist. It make heaps too. We got twenty four minis and sixteen texas muffins size. The color and texture remind me of Kimmyh's light carrot cake.

Are you serious, JD, or is this 1st April ;)?  They sound to be a totally unique muffin - I really think I will have to be a coward and wait a wee while before I give these a try ;D.

First prize for the most interesting recipe, though, I think.

 ;D ;D It's for real girls and my visitors this afternoon had no idea they contained baked beans until I told them. There are some nice recipes on that link.

Blimey Judy I thought they were going to be savoury muffins until I read the list of ingredients.They're so unique I will have to give them a try,I wonder if DH will notice :-)) :-)) :D :D

I love baked beans Denise so had nothing to lose really. Sometimes you just have to have a go at something a little different, if you don't try it you will never know.  Nothing is easier than making muffins in the TMX.

I haven't bothered with muffins cause I figure they are easy in a bowl. I am interested in trying now you recommend it

I sat here openmouthed reading this recipe. Never would I have come up with using baked beans to make muffins. Very interesting and somewhat different from your usual run of the mill muffins.

Just noticed it took you 2 years to get around to trying this recipe Denzelmum - that's how many recipes we have on our to-do list  :D
Thanks for trying it, something different to the normal run of mill muffins and a great talking point when giving them to unsuspecting visitors.
