Lemon butter

I have volunteered to make Lemon Butter to sell at school as part of our fund raising. Is the EDC recipe the best, and what is rhe largest quantity i can make at one time. Also how long will it keep for.

Dunno Hally, keep an eye on the weight when you add the ingredients. I probably wouldn't go over 1.5kg just to be on the safe side. I am sure a forum jammer will come up with a very good answer tho.

 I was going to make Teninas Lemon Curd today which I have made before with great success.

Chookies Granny smith & lemon is good.
MJ's got good reviews.
Tenina's is great too.

JD is chookies recipe more of a sauce ie. for pouring?

Hally,
I have my own favorite has 3 eggs and 2 yolks  3/4 cup sugar and juice of 3 lemons,125 gm butter- I have successfully done a double of this. It was on last seasons masterchef as a microwave recipe but thernie does it better!

Yes, you are right there CP, just reread the recipe and she says it is more like a pouring custard.  Been so long since I made it.  Nice though  ;)

Maddy, I can't remember exactly with my double when I do a single 8 min 80 deg speed 3/4. I just keep checking until I think it is thick enough.

Thanks everyoe,  once i get delivered some lemons i will try Tennias and Bedlams, they both seem  very easy. If they both taste great i will make whichever is cheaper as i am supplying all the ingredients.

I wasn't intending it as a recipe post(although it is my fav) I was just explaining that I did a double of the listed quantities.

Bally, I don't want to confuse the issue, but I make a LEMON SPREAD.  It is dairy free as it has no butter in it.  I usually make double and it keeps for well over a month in the fridge.
