was just flippin through the cook book  and i was checking out the recipes ...and i was thinking about making the fast chicken curry (hehehe with pork)

and it calls for 300 to 400g of coconut milk ..... well on hand in my pantry i have 165ml of milk do you think i could be naughty and top up the rest of the measure with coconut cream cause i have a big tin of that =) ?
as long as you keep eating my pancakes .....i will stand here and keep flippin them out filled with nothing but love in my heart 'cause you chose my table to sit at =)P

I've never done it but I googled and came up with this - the last sentence suggests you can mix the 2 ingredients.

Coconut Milk
Coconut milk, like coconut cream, can also be substituted on a 1 cup to 1 cup basis with regular milk. Other alternatives include soy milk, almond milk or rice milk. Coconut milk can also be substituted on a 1 cup to 1 cup basis with whipped cream. When done in this fashion, also add ½ tsp of coconut extract for every cup substituted in this manner. Finally, you can also substitute 1 cup of coconut milk with 3 tbsp of coconut cream and â cup of water, or low-fat or skim milk.

have you tried making the coconut milk from the EDC - I much prefer it to the can (which scares me when I see all that grey tinges going into my food)

 :-\ :-\ :-\nope i didn't even think about it ...... for tonight i will set about emptying my pantry ....
(i sort of do this every year durring sept and oct with my freezers too as i like to make space for xmas stuff and cause cyclone season is just around the corner .... and i hate the thought of $$$ going to waste )

hopefully when i get a bit more into my relationship with Thelma ...this time next year my pantry will be looking a whole lot different

JD thanks for posting that info - very handy.

CP63 - I haven't made the coconut milk yet, but I should as I also hate to see those grey tinges.

ok dinner was not bad ..... but was too runny for my liking ...so next time i just might use all cream ...lol

i did try a bit of arrowroot flour ..... but  i wil play  and get it thick ..... but the 3 little pigs were S-T-A-R-V-I-I-I-I-I-N-G ....  :-)) so i just dish it up

Heh heh, love your name!

I generally use coconut cream. It has less water and more coconut content. I thicken with corn starch (real cornflour).
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
