Made the ultimate chocolate cake today   ;D

Decided on muffin size as they are just about right for DGS.
I think these have to be the ugliest cakes I have ever made.  The batter stuck to the pan and everywhere.
But they got the thumbs up from DH and DGS so I will try again.

I'm not sure what went wrong.  The batter was very runny.  I only 1/2 filled the cases but they rose to over double size and had huge holes in them.  :o :o I tried to get pics of them out of the tin but it didn't show as they cakes were so dark and chocolatey.
I am wondering if it was because I used organic cacao powder instead of the usual cocoa powder?
Everything I read said cocoa and cacao were interchangeable and I prefer the organic cacao

I made the recipe in mini muffin pans Rosie and mine rose too high too although there were no holes in them. Lovely cake, just need to control it somehow when making muffins I think. I tend to overfill anything small, I think I 3/4 filled my pans so 1/2 full may have worked for me.

made yougurt on Thursday night whilst chatting to family and enjoying a 'end of work year' wine or two. Completely forgot to cool the milk before adding the yogurt starter. :-\

Not much you can do the following day with tepid curdled milk.....  :-))

to make matters worse I made a big batch of the delicious fudge recipes from the forum and packaged some up to give as treats for christmas lunch guests, completely forgetting that DS is allergic to some nuts ....   Luckily replaced with the cookies and cream fudge before I could poison him tomorrow.

Didn't even have a wine as an excuse for this one!

tried to make the Pavlova from In the Mix. Well the egg whites fluffed up nicely and just about came through the MC hole! After about 7 mins I noticed in the recipe that the sugar had to be added after about 5 mins. Started adding the sugar but because it was so close to the MC hole nothing was happening to it so I opened up the lid and stuck a spoon down the mix and it just when *PHOOF!* and deflated like a balloon. Not to be deterred I kept adding the sugar bit by bit until the time was up but I wasn't adding it quick enough like the recipe said, and when I took the lid off and had a look it was just a liquidy slosh. Hhmn....not sure what happened but I got my handbeaters out and another carton of eggs and made a Pav the normal way.

That way you can be sure it will be a success CP.  It does seem to be a bit hit and miss with the Thermomix unfortunately.
