I made this last night with spinach and a bit of zucchini as I didn't have quite enough spinach. It was really lovely and everyone ate it all up, even though zucchini is one of their least favorite foods. Will definitely be making it again. Thanks for posting Cookie1.

I'd like to try this but don't have a quiche plate, do you think I can use a baking tin lined with baking paper or a rectancular pyrex glass dish?
Does the baking vessel make a lot of difference other than shape? Vary cooking time maybe?

You can use any dish you have chocymoose. I have taken a photo of some of the dishes I would use if I didn't have quiche dishes. The pyrex lid would be a little small so you would need to use 2 of those but you may have a much bigger one. My quiche dishes are 26cm dia and either 4 or 5 cm deep so if you use a similar sized dish and only pour the mixture in to that depth, the cooking time should be the same.

Are you supposed to use the spinach stems too or cut them off? Made this today without stems, it was quite nice and light

I don't know what Cookie does chocymoose but if I buy fresh spinach I always chop off the stems but if it comes from my garden I do use part of the stem in my cooking and cook that for a while before adding the leaves.
