I altered slightly
I doubled recipe, added 1/2 tsp garlic powder & 1/2 tsp onion powder.  left out the chives
Used my Tbsp. sized cookie scoop, and the  doubled recipe made 50 gems.



I kept the 2 egg whites, and in a cup whisked 2 Tbsp. rice flour into whites.
brushed over the gems



And baked for 35 minutes. 
The egg white coating made the outside really crunchy, and the mash inside was so creamy

Good tweak maddy - that's a handy gadget, a 1 tblspn scoop. What did you do with the leftovers, surely you didn't eat them all in one sitting unless you had visitors  ;)

Made these tonight and they are lovely. Used garlic butter, no chives and piped onto tray. Piped some into initials for the boys. Everyone loved them.  Great way of doing mashed potato thank you.

I was going to make mashed potato to go with curried sausages tonight but think I'll make these instead so I can make the mash at lunch time and rice when I cook the sausages at dinner time. Thinking I'll give Maddie's version a go.

What could you substitute for rice flour in Maddy's variation ... or if I ground rice into flour would that do the trick?

I grind rice into flour for shortbread so I am sure you could do it for these. I think it was 1 minute speed 9 or 10.
May all dairy items in your fridge be of questionable vintage.
