Thermomix TM31 - Imprescindible para tu cocina - Essential for your kitchen

Let me know if you want a recipe that does not have a link to it and I will make it a priority.

NB Where sugar is used in these recipes, the quantities can be quite high (to suit the Spanish sweet tooth ;D), so you may wish to adjust the quantity to suit your own taste.

BASICS:
Orange juice
Quick lemon sorbet
Mayonnaise
Hollandaise sauce
Melted chocolate
Whipped cream
Butter
Swiss meringue
Bread dough
Shortcrust pastry
Four Quarters Cake
Cooking pasta
Fish stock
Preserved garlic (yum, yum  ;D)
Sofrito (a basic Spanish sauce with tomatoes and onions)
Meat stock cubes
Garlic and parsley picada (a mixture you can use to add to vinaigrettes)
Cocas dough (dough for little Spanish pizzas - I think they originate from Mallorca??)
Choux pastry
Pizza dough
Crepe batter
Shortcrust pastry with eggs
Empanada (pasty) dough - yeasted
Ditto - unyeasted
Milk loaf
Brioche dough
Sweet shortcrust pastry

ACCOMPANIMENTS AND GARNISHES
Puréed potato
Potatoes as a garnish or for tortillas
Apple purée
Red cabbage
Courgette or marrow
White rice
Flavoured butter

SAUCES:
Lactonesa (a type of mayonnaise made with milk, not eggs)
Genoese pesto
Marie Rose sauce
Vinaigrette
Bechamel sauce
Diet bechamel sauce
Bearnaise sauce
Sauce for meat (onion, mushrooms, carrots)
Truffle sauce
Tartare sauce
Red mojo sauce (Canary Islands)
Green mojo sauce (Canary Islands)
Warm sauce for salads and vegetables (nuts, soy sauce)
Mornay sauce
Mushroom sauce
Roquefort sauce
Green peppercorn sauce
Bolognese sauce

Tomate frito (lit. fried tomato, but just tomato sauce with more ingredients than the one above)

Alboronía with poached eggs (I don't think that albonoría has a translation in English, but it is a thick vegetable stew and this recipe also includes king prawns)

Red salad (includes beetroot)
Festival of vegetables with vinaigrette
Panaché of vegetables (lots of mixed ones)
Potato and prawn stew
Stuffed piquillo peppers

SOUPS:
Gazpacho
Salmorejo (a bit like gazpacho but thicker and tomatoes only - delicious)
Ajoblanco (cold, raw garlic soup with grapes)

That's quite a list, JB.  Thanks for taking the time to post that for us.  There are quite a few recipes I would like, but I would love it if you could post the preserved garlic recipe, it sounds interesting.

Hi Cuilidh will PM you asap.  Yes, there are a lot of recipes in that book and as I am a garlic addict that will be one of the first I make when I can get into town to shop for more lovely garlic  ;D

I did intend to have them all translated by now but have been so terribly busy lately.  If you can hang on for 2-3 weeks I can do them then when I will have some free time, although I may be able to get one or two of them done before.

Have added the above recipes so far and will do the rest tomorrow - just click on the links above.  Apologies for delay but have not only been busy but also had problems with my neck and knee for a few months and have been told that I should only be on my computer for half an hour at a time  >:(  Plus painkillers make me very sleepy ...
