Recipe Review - Lettuce Soup - p17FF
« on: January 01, 2012, 12:50:13 am »
I have made this soup numerous times now as we make it regularly at our local TMX Back to Basics cooking class.

I love the taste of the soup, although I can't be sure that I have ever found exactly "butter lettuce" variety.  It is always just some sort of lettuce and hoping for the best, but it has been delish anyway.

The soup doesn't make a lot, being based on only 500g water, so it would be very handy one for single people using the Thermomix.

Just thought I'd mention that this soup works just as well with a swede if you don't have a potato on hand:

I guess a lot depends on the quality of the vege stock concentrate.

I tried this tonight at a cooking class.  It was OK, but I think there are much nicer soups out there.

I tried this at a Festive Flavour Cooking Class this week and loved it. I think she made double the quantity, although it was a bit of a squeeze in the bowl. I thought it was super tasty - I love that you can serve it hot or cold. Isn't it the same recipe as the Indian cookbook?
