Chookie I gave them a good hour on the bench, after which it didn't look like they would rise much more, so cooked them.

I made a double batch on Wednesday night. I made up the the point of pipping the cross on the covered the backing trays and pooped them into the fridge for the night. I took the out of the fridge about 5:30 in the morning and heated the oven for 10 minutes on keep warm setting, turned the oven off and pooped both trays in while I went out for my morning bike ride.

When I got back I took the trays from the oven, turned it on to preheat and piped the crosses on. They came out pretty good. I was happy with amount of rise.

I would use this method again when I wanted fresh hot cross buns for breakfast.

These also freeze well. I wrapped a couple in alfoil and placed in ziplock freezer safe bags and froze. Just had some for afternoon tea. Removed from freezer, removed alfoil, sprinkle with water, loosely cover plate with cling wrap and heated for 30 seconds. Perfect. Very delicious. Must make some more.

MEP, sounds good.
Bunnings were giving away free HotXBuns today.  Just had to have one. Shock horror, it had chocolate chips in it.  Still ate it though.

I'm very traditional when it comes to hit cross buns - fruit, peel and mixed spice variety, not chocolate. Nice of them to give them out for free though.

My mob have always complained about the amount of spice in their HCB. However they both raved about the ones I made for DD to take for work, so I made another batch with the full amount of spices. They disappeared very rapidly. I'm listening to them anymore!!  ( they were lovely I must admit).
I managed to grab a photo of the last few.

Thanks for that, I've had trouble accessing this forum using Tapatalk, and I've been away, so I'm just catching up.

Will save this recipe to try soon, Easter or not!
