Eggplant - Sidedish

Hi, Has anybody got a sidedish recipe with eggplant as the main ingredient. I have grown some at home and only have a few. They are the long thin type as opposed to the large tear drop shape. Not sure if that makes any difference.

My eggplant parmigiana could be served as a side with meat and other vegies Lisa.
Then there's farfallina's ratatouille
