I made this today using a 20cm plain ring tin. I sprayed the tin but didn't line it and it came out unstuck. The tin was the perfect size for this to cut into 2cm thick slices to have with a cuppa.
Next time I will still use the 150g of sugar and after milling, will remove 1 tbs for the topping. I only realised after making the cake that I needed caster sugar for the topping and didn't have any. Not wanting to mill any just for this, I ended up just using raw sugar which worked well anyway.
I also only mixed for 15 secs/speed 4 for the last bit, didn't want to go over speed 4 with the butterfly.
Such a lovely cake, I had to stop myself for going back for another piece.

I'm so pleased to see this cake is getting a work out. It's so delicious but I love it because it is such an unfussy cake and goes so well with a cup of tea or coffee.

I made this today for visitors, it's always a winner and so quick to make. I reduced the sugar to 80g and it was fine.

I chose this mixture today to try as cupcakes in the air fryer as the quantity wasn’t too much for what I wanted. Never have been a good cake maker but with doing very little cooking over the past 6 years, although they look horrible I was pleased with how they taste. I cooked them for 14 minutes on a rack in the air fryer, it made 8 cupcakes. As they are only for me and it was only an experiment, it doesn’t matter how they look.
