I am getting ready for The Great Quail Challenge
(http://img.tapatalk.com/d/14/06/16/sagugane.jpg)
I will be cooking 8 quail using 4 recipes!
Any other challengers?
Gert
Ideas from other forum members.
Gert-quail, vegies, cream of chicken soup. Into the SC and leave overnight.
Arcadia-salt and pepper baked quail, served on chicken ravioli with a carbonara sauce.
Emerald Sue- marinate quail in ketchup manis, honey and sesame oil.
Gert-version 2. I cooked in the Thermomix a blend of chilli, honey, dried and fresh finger for basting. DH was in charge of making the beer ass Quail thingies . For putting in the little cans to baste the inside and keep them moist was about 30 mils of the stuff in that bottle plus a few herbs. Served with savoury couscous.
Goldfish-The marinade: oil, lemon grass, garlic, spring onions, ground red pepper, fish sauce, salt, Chinese 5 spice powder, soy and sugar.
Basted with garlic oil made from garlic, oil and ginger
Garnished with Vietnamese Mint, chilli with lime wedges
Served with dipping sauce: hoisin sauce, soy sauce and Chinese black vinegar
Gert-version 3. I more or......less followed this http://www.lifestylefood.com.au/recipes/304/grilled-quail. recipe from Neil Perry and made the marinade in the Thermomix.
Version 4-This is more or less this recipe. http://www.maggiebeer.com.au/recipes/apricot-stuffed-quail . I made the apricot verjuice syrup the other day.
-
It's looking good, Gert! Are these to be done"vertically" . . .? I can't use the bbq this weekend, but they're small enough so I can "verticalise" them in the oven. ;D ;D
-
I may verticalise a couple of them! Then another couple may be pan fried. One couple are calling out to be "roasted" and the last couple are sitting on the fence .
So I am thinking quail four ways . How about you?
I saw some lovely spatchcocks in Coles as well but I was not tempted to buy then just yet as I am loving an empty freezer.
Wotchya thinking GF?
Gert
-
I don't even think I could buy quail or spatchcocks this side of the river. Boo! hoo! But then the mob wouldn't eat it.
Can we have another challenge later so I can join in? Not awful offal though. ;D ;D
-
Still thinking, Gert. I'll go back and have another look at those links I put up before, and then do a bit more "looking up" of some more suggestions.
-

You are on cookie. Name your poison! Goat?
Gert
-
Nah. Something the mob will eat. Croc would be ok but I would never get that here.
-
As much as I would love to join your challenge Gert, I keep seeing all the little quails that would fly up in front of the header at harvest time.
Mum would slow down and turn the "chomping bits" off so as not to munch up any of them. Dad would be on the CB saying "what the hell are you avoiding now love?" Mum would reply "the quails, I can't munch up the quails, it'll taint the grain sample at the bin and we'll be docked" (well that was her excuse while she was trying to avoid them).
I would be sitting on the floor of the header doing my homework giggling, as I could imagine Dad in the truck shaking his head.
So no, I will not be doing The Great Quail Challenge.
I do look forward to seeing your results though :)
Croc is a bit scarce Cookie...even north of the river!
-
I used to have quails in the bottom of the aviary so I don't think I could eat one Gert.
-
We had a quail trail we would follow up at the Bungle Bungles. At first we thought it was snakes going through the long grass but it was quails.
Nikkit we had some on the farm in the aviary, to eat the seed that the budgies dropped. Except every now and then a nasty snake would find his way in and have a quail feast.
-
I am getting ready for The Great Quail Challenge
Gert
Just one question ... Why?
-
..... why not? It's just a spinoff from Gert's barbecued duck and just for fun. :)
Surely buying processed quail is no different to going out and buying chicken, duck, goose, turkey, etc..... Is it??????
-
..... why not? It's just a spinoff from Gert's barbecued duck and just for fun. :)
Aaahh .. I missed the barbecued duck! Makes more sense now (I think!)
-
I have a friend in Tassie who is a chef and quail is one of her specialities. Also they used to have a B & B and hosted Duck Shooting parties so she does wild Duck pretty well .
When visiting once she took me to the quail farm and I saw how the quail are grown. All free range and all cared for unlike some chicken farms. I was very impressed but..... I was not able to buy nor eat quail for abut a year until the memory faded.
I do love the flavour of quail. It is fun to cook and fun to eat. Very expensive in restaurants so I prefer to cook my own.
GF we can just have fun all by ourselves. LOL!
I have a couple of standard ways but might try something new. What abut you? If others don't like looking at quail they don't have to look but they are interesting little critters.
Poor mum Nikkit. she had her own quail challenge.
Gert
-
Nah. Something the mob will eat. Croc would be ok but I would never get that here.
We have a lot of croc here. Easy to buy. Love croc but it is expensive. How about emu?
Gert
-
It's a bit oily. Possibly ok in the SC.
-
I had spatchcok quail recently in a restaurant, yum, but there was very little meat & lots of bones :(
-
I've probably had quail and not even known. spatchcock for me tho :D I wonder where I could get it from...maybe Northbridge?
-
There's a butcher in Fremantle who has game, and one in Hamilton Hill
-
They have both in Coles here in Far North Queensland . Can you believe that?
A spatchcock is just a a very small chicken. A quail is a game bird and not a tiny chicken
Really a spatchcock can feed 2. They can weight around 500 gm and up.
Restaurants often say spatchcock because quail is not acceptable but they are very different birds.
So CP you joining the challenge?
My DH's has joined the spirit of the challenge and has been in the garage making me a something!! All will be revealed on Sat ? Or Sunday.? GF
Gert
-
either day is good for me, Gert. Should we include a Spatchcock section as well? :D
-
After a very intense debate with myself I feel we should include all those who are opposed to the eating of Quails but who have no objection to eating small chickens should be included in the challenge.
I am of the mind that the challenge should start from 0000 on Sat 21 to 2399 Sun 22 . This will allow for some to creat a meal which may include breakfast , brunch , lunch , afternoon tea and dinner.
Any thoughts?
Gert
-
It's good to see someone trying to get forum members motivated again Gert, is that what drove you to this challenge?
-
We shall see Judy. We shall see.
This is a very serious challenge. People around the world will take notice of our efforts to create the perfect quail/spatchcock meal .
No herb or spice will be left out .
Blood will be spilt.
Bones will be broken.
Who will judge this challenge?
Gert
-
Great idea Gert. I won't be joining in but will follow with interest.
-
It looks as if I will be watching from the side line.
I've just asked DH if he would eat a quail if I cooked it. The answer was a definate no, he thinks they are such cute little things so why would you want to eat one.
My first challenge would be to find one let alone cook it. :D
-
Count me in! DH has just been to the central market and bought me a pack of quail.
It's been years since I've cooked them - I need to consult my recipe books
I'm thinking Asian flavours.......
-
I'll go spatchcock. One query - is it cooked in the TM or any other method?
-
Yes, wondered the same thing CP.
-
I think we would limit ourselves if we restricted it to the Thermomix but maybe one element of the recipe should be in the Themomix. What do you think?
Gert
-
It would be nice Gert but difficult for the whole recipe I would think - you never know though, someone might come up with a totally TMX recipe.
-
that suits me (could always fib about chopping an onion for 5 secs/Speed 5) ;D hehe but has JD says we may get a new TM recipe
-
I think as long as something is done in the thermomix. As you say CP onion chopped in the thermomix. I could go to Fremantle but I think I would have trouble convincing DD to eat it and DH would say "where is all the bloody thing".
Perhaps I will simply enter into the spirit of the fun by simply using a small chook. Just for lots of fun.
-
Why not. Be fun.
Gert
-
can't wait to see the photos
-
Looks like fun, ladies 😄
My grandpa used to keep quails for their eggs. He would sell the eggs to lok lok shops owners. They serve bite-sized food strung on bamboo sticks. Customers order their food and dunk the sticks into hot broth to cook. Then they dip the food into chilli sauce.
I didn't mind collecting the eggs. But cleaning their little food and drink bowls were another story. Yuck! 😁
Enjoy your challenge. Looking forward to the photos 😄
-
I love quail eggs. I wish. I could get my hands on some.
I have my quails all in a row ready to go. Marathon Quail cooking and eating. After that I may never eat quail again.
Gert
-
Gert do you have any recipes in mind that your wouldn't mind sharing.
I actually bought a pack last Tuesday when I was in town, but have never cooked them before.
Will watch and may join.
-
Katie is going to see if she can find some quails for me when she does her shopping tomorrow. I've done some research and it's not hard at all to find recipes in my books or online so I am going to give it a go if Katie is successful. No pressure Katie, if I can I will but it's not the end of the world if you're unsuccessful.
-

There are thousands on line but a good place to start is Maggie Beer as she used duck and quail in many of her recipes.
Google the cuisine followed by quail such as Thai Quail or Chinese Quail.
They are quite easy and quick to cook so you may learn something on Sat!
Gert
-
Yes, I've dug out my Maggie Beer cookbook for guidance and think I will butterfly them, marinade them in a honey/soy/ginger mix and BBQ them on Sunday night.
Judy, my quails are from Gawler River butchers and DH bought them from the central Market. He had choice from a couple of stalls including Angelakis.
-
Katie usually goes to Gawler River butchers near where she lives Sue so hopefully they will have them. It's a bit pot luck there though.
-
Also the Italians are good at quail.
Gert
-
That's where I'm going to try first, as I always go there Friday.
If I get some I'm going to tell DH thats what we are having for dinner. He has a thing about bones and won't eat any meat if the bone is still in. He will freak out at the thought of the quail!
-
Poor man Katie.
It would be lovely if you joined in Arcadia. I've been looking for a small chook, that is free range. Hoping I can find one.
-
He will probably throw my quail in the bin Katie. I'd better get there before he comes home from work LOL
-
I'll just send him a photo when I get home with them. I'll keep them safe for you Judy.
-
I have found my free range chook and decided on my recipe. Now barring broken teeth, crook hips and ill BIL's we should be able to have it tomorrow night.
-
I have one for breakfast cookie to get us all going!
Gert
-
Sorry Gert, I won't be participating in this challenge as Katie was unable to find some quail for me today in all the places she visited.
I look forward to seeing all the recipes from those taking part and thank you for putting a little excitement into the forum with the idea of another challenge - we haven't had one for a while.
-
Would be a major challenge here to even find the quail. Sorry I cannot join in, we have had quail before I cooked them many moons ago from a recipe from the Womens Weekly. They were stuffed with a almond rice seasoning and served with a grape & grape juice sauce which had port in it., I also boned them out before stuffing as it was for a dinner party . We did enjoy them.
-
Like you Marie, no quail round here. It is my excuse for using a chicken in a way I wouldn't do otherwise. I can't wait to see all the quail or spatchcocks.
Gert are you making quail porridge, or bacon wrapped quail for breakfast? I'm looking forward to seeing it tomorrow.
-
Not joining in but I do love watching your cooking challenges Gert! Happy cooking.

Emme you have already done the quail challenge by boning one of the dame things. I am hoping my breakfast quail will debone itself
Judy no worries . How about rabbit?
Quail nearly ready to go for brekkie!
Gert
-
I'm stll trying to get either spatch cock or quail for tomorrow night. If I can't get the ingredients I may have to go a red meat dish for Saturday or Sunday cos after that its back down to one person (moi) again. Have found a lovely spatchock chargrill recipe.
-
I love spatchcock. Lovely and sweet especially chargrilled. Look forward to the recipe and review.
Breakfast quail in the pot.

Let the challenge begin. The reason I was up so late was so I could put the small slow cooker on and have my first ever slow cooked quail for breakfast. This was a great way to start and the "meat" fell of the bone . DH declared it a success and a lovely start to the weekend. He is looking forward to Quail later in the day as he actually contributes to the cooking of. So stand by for a combined effort in episode 2 of my challenge.
Slow cooked quail. Just chuck it all in and go to bed.

I made salt and pepper baked quail last night and served it on chicken ravioli with a sort of carbonara sauce.
The quail was really delicious, not gamey at all but was a nice full flavour with a hint of sweetness, which went lovely with the salt and pepper combination.
We all thoroughly enjoyed it and I will be cooking them again.
Have a couple of photos but can't post them.
-
I'm loving this challenge and sorry I'm not able to participate this time...Gert, your breakfast quail looks yummy!
-
That looks great Gert, well done you. Did you leave the quail whole - it's hard to believe all that fitted into a 1.5 litre SC :o
Yes I do like rabbit but I wanted to join in your challenge this weekend like the others so will wait now for the next one. I procrastinated too long on this one as I had other things going on that needed attention.
-
Brilliant idea, Gert! Little effort, no fuss and a great dish!! Arcadia, that sounds really nice! I'm keeping notes . . ;D ;D Won't be doing mine until later today. :D
-
Here are the little birds butterflied and then salt and peppered. The final photo ended up blury, to much of a hurry.

Looks great Arcadia. The recipe delicious.
I cut the quail into quarters.
So far so good.
We will get ya going next time Judy.
-
Loving this challege too, cant manage this and wirld cup. Loving gerts breakfast. :)
-
Looks good Gert and Acadia.
My quails have been butterflied and are now resting in their marinade until tomorrow. I have also parboiled some chicken wings and put them in the same marinade, and will BBQ them tomorrow as well.

Loving following this challenge!
-
Clever people. They are all so different and great looking. My chicken will be going on a little later this afternoon. I'm glad I got the chicken as the rest of the family said no way were they eating quail, they are too cute.

Fantastic emeraldsue. Love it.

Did DH lose a few fingers making the beer ass cans?
Seriously though, looks amazing

He embraced the challenge and did well. No fingers lost.
Really delicious .

Lovely presentation Gert, you're eating well up there ;D
-
Gert yum :P
ES waiting to see yours :)

Having to make apricot verjuice reduction for tomorrow's recipe. It is a sort of take on Maggie Beers recipe.
Verjuice, dried apricots, lemon juice and zest some sugar then cook away in the Thermomix.

This was taken from a book called "Heavenly Fragrance" by Carol Selva Rajah . .
Grilled Quail with Lemongrass and Ginger (except I baked it in the oven -which was an option given in the book . . ;D)
The marinade: oil, lemon grass, garlic, spring onions, ground red pepper, fish sauce, salt, Chinese 5 spice powder, soy and sugar.
Basted with garlic oil made from garlic, oil and ginger
Garnished with Vietnamese Mint, chilli with lime wedges
Served with dipping sauce: hoisin sauce, soy sauce and Chinese black vinegar

I'm really enjoying following this thread. Well done everyone on your very creative quail dishes :)
-
Goldfish that looks fantastic. Yummy times 10. My kinda quail.
Gert
-
Awesome work ladies!
-
You clever folks. The quail look good. Our version was Jamie's Roast Chicken with cous cous. We all enjoyed it. The cous cous being cooked in the juices of the chicken made it very tasty. I added to the veggies.
The cous cous is hidden under the veggies and chicken.

Fantastic Quail recipe GF 8)
Your Roast Chicken looks soooo delicious Cookie 8)

I see your couscous Chookie, it's a lovely meal.

Looks fantastic cookie. Any leftovers?

Sounds very tasty GF, have you eaten quail before?
Thanks, Judy . . yes, but some years ago now. They're a bit fiddly to eat with those tiny bones. When I was looking for these I noticed some places advertised quail fillets which would have been interesting.
Goldfish that looks fantastic. Yummy times 10. My kinda quail.
Gert
Thanks Gert. Yours look pretty good, too!!! You've been very creative - look forward to see how your apricot recipe goes tomorrow. :D
Everyone's efforts look so great!! :D
-
looks good.
-
All looking very good :)
-
This was more of a taste test as I only had one "can" . . . actually it's the same one I used for the duck.
http://www.forumthermomix.com/index.php?topic=10542.0 The quail was persuaded to perch almost over the opening. I used wine instead of beer. The last of the big spenders here, I bought this wine a while ago especially for cooking - 3 for $12 - but, quite frankly, it's not too bad at all!! ;D ;D
Inspiration came from: http://www.fieldandstream.com/blogs/hunting/2010/03/recipe-perfect-grilled-quail and a comment . .
from smallfrey wrote 4 years 14 weeks ago
i call my recipe beer can quail. first i rub lemon juice over the quail, then season the quail, with a rub consisting of salt , pepper, tumeric, coriander, and spices of your choice. refrigerate for an hour or so. i use a stainless steel condiment cup, fill it with beer, stand the quail up over the little cup, on the grill. i prepare a marinade in a spray bottle, which consists of 1/3 redwine vinegar, 1/3 olive oil, and 1/3 apple juice. while the quail is cooking you spray it often with the mixture. while it is grilling i cover it with a stainless steel, clean, water bucket, like the ones my dogs drink water from. because it stands up on the grill, it cooks up nicely and evenly. we have cooked it right over a campfire as well. it is really good!
I literally soaked the quail in lemon juice, and then coated it with a mixture of salt (Salt with Attitude - by Green Farmhouse ;D) ), pepper, turmeric and a wacking good dose of Herbie's Chilli Hit. It was left in the fridge overnight. This morning it was placed on the "can" containing the white wine (maybe next time add some more herbs, etc. to the wine?). The little green spray bottle was prepared with the 1/3 olive oil, 1/3 red wine vinegar, 1/3 apple juice (these little spray bottles are worth their weight in gold . . Uni suggested using them in her bread making class some time ago. .thanks, Uni!! :-*)
Unfortunately, I didn't have anything to go over the top as Smallfrey suggested so I just kept spraying it. :-))
Out of the oven and with a good squirt of lime juice, the taste for me was fantastic!!! Thank you, Smallfrey!! :-* ;D

Gert

Gert, that marinade looks wonderful! Can you divulge the ingredients? Please?? :-*

Again, great plating up Gert. Are you getting sick of quail yet LOL.
-
Last set. Thank goodness we had three for lunch. The plating here is pretty bad and you will not see the final balsamic glaze as I had put it on the table.
This is more or less this recipe. http://www.maggiebeer.com.au/recipes/apricot-stuffed-quail . I made the apricot verjuice syrup the other day.

I doubt I will be cooking another quail for a while! They were all good but the marinated one was best. The slow cooked the easiest.
Gert
-
Thanks for that link, Gert. It looks and sounds really good. When there's a print version and a video (or tv version) I always like to compare the two - always interesting to see the minor - and sometimes major - differences between the two. ;D
I have three quail left but ran out of time and energy . . ;D ;D . . going to put those in the slow cooker and have them tomorrow - so thanks for that idea, too! :)
-
Congratulations to all the Quail Cooks. It has been great watching the challenge unfold. ;D

Gert

Thanks Gert for all the quail fun and GF for instigating it. The food all looks lovely.
Yes Gert we have lots left. Lunch tomorrow as we were out all day.
-
Well done ladies, perhaps if you are a quail convert GF you will need to employ the talents of Gerts DH and get one of those special sized apparatus.
Looked like good fun.
-
It has been a hoot. Now who will come up with another challenge. Any challenge . Doesn't need to be a cooking challenge.
Gert
-
I was only thinking today that I'd like a mushroom or beetroot challenge, or both in case some don't
like one or the other of these vegies.
-
We should go with that Judy. Make something using either mushrooms or beet root. What do you say?
-
Judy, I loooove mushrooms but detest beetroot.
We have just finished demolishing the quail. DD enjoyed it, DS ate it, but preferred the chicken, and announced that he
preferred quail eggs.
Here are some photos:
First, the chicken

The leftovers........

So many tiny bones, did you have to be careful not to swallow any? They look great Sue and good to hear that the kids ate them too.
OK girls let's go with the vegie challenge next. Either mushrooms or beetroot, one or both if you like. Off to look at recipes.
-
Sue, well done.
Judy, I could get in on that. The great vege challenge!

Look forward to you joining us Denise. I'll start a new topic in the vegie section. http://www.forumthermomix.com/index.php?topic=15451.0
Gert have all those who wanted to participate in the quail challenge done so?

Emerald sue fantastic job. Love it.
Is it canned beets you hate? My daughter does but loved fresh.

Fantastic cooking ES 8)

Thanks Gert.
I'm not fond of vinegar or pickles, so don't like tinned. Beetroot. Roasted beetroot just tastes like dirt to me , so I don't like that either.
Apart from beetroot, I'll eat pretty much anything else.
Oh, I'm not keen on tongue or kibbe either :-[
-
Well done ladies! I've lost my cooking mojo and just as well as its nearly holidays.
-
That is interesting EmeraldSue . I guess beetroot is jut one of those things you love or hate. Now kibbe would be a challenge for anyone especially made with camel meat!

Loving the photos. Great cooking ladies. Gert, I reckon you will have had enough quail for some time. ;D
-
Love all the photos. Has given me some wonderful ideas, esp love the apricot stuffing have printed it off. Just have to get to town and hope they still have quail available.
I did find a recipe for a pie that has the little quail leg poking out of the top, very cute.
-
loved following the challenge, photos, recipes. thank you
-
Congratulations to everyone who entered the challenge.
I loved following everyone's efforts as well as the photos.
-
Fantastic cooking, has been such fun to follow this! For some reason the quail always look like they are little people posing to me lol. Legs crossed etc :)
-
Now that everyone has eaten the quail, I can say that they looked like frogs legs sticking out to me. Like the ones we used to
chop up dissect at Uni. :D
-
There were some funny poses there ;D ;D
-
Ah cookie you mut have been given little frogs to work on. Mine were a lot bigger than that! I love frogs legs .
Gert
-
I don't think I could ever face frog legs.
-
Careful, Cookie . . . . or else you'll have Gert throwing out a "you know what" challenge!! ;D
http://www.wikihow.com/Cook-Frog-Legs ;D ;D
-
Yuk. I couldn't source quail or Spatchcock round here so I'd never find frog legs. I guess I could go out and catch some, although I may end up in gaol for that. :'(
-
i couldn't get them either and then cos of my birthday I stood back abit from cooking...if I mention to my DH that I'm going to cook something he starts to invite people around and it gets way out of hand. I mentioned that I was going to braise 2.5kg of beef small ribs and before you knew it he had surpassed the serves and I put them in the freezer and said lets can that idea :-))
-
Funny CP. We have lots of frogs around here cookie! I could catch and freeze some for you.
What could be cook entirely in the Thermomix that would be fun, colourful and everyone would like? Maybe something we would not normally cook and a wee bit out of our comfort zone . I can think of al lot of things I do not cook but I ain't telling.

Plenty of frogs here at the moment Cookie, they are singing their little heads off outside.
But as much as I love frog meat, I'd rather you didn't catch them up here :)
-
Found this pic from when we were in KL...
Easy as in the Thermy!
:o :o

Put in your frog, speed 9, 1 minute.

Put in your frog, speed 9, 1 minute.
No cookie. Put in your frog, add butter. 100, speed 2 , 10 minutes to sauté. Then blitz for 5 minutes at least to get the right texture.

Just catching up on this thread and was thinking the same that the quail reminded me of frog legs and remembered this photo I had from our holiday last year.

Oh Jeninwa, what a picture. I would rather have the custard apples I saw in the corner. :D Did you try the frogs legs at all?
-
I think we have been to the same markets in Vietnam. Will I post the pics of the rats?
Gert
-
Do they eat them as well? If so I will still have the custard apples in the corner. :D
-
Yup.
