The Great Quail Challenge

This was more of a taste test as I only had one "can"  . . . actually it's the same one I used for the duck.
http://www.forumthermomix.com/index.php?topic=10542.0    The quail was persuaded to perch almost over the opening.  I used wine instead of beer.  The last of the big spenders here, I bought this wine a while ago especially for cooking - 3 for $12 - but, quite frankly, it's not too bad at all!!  ;D ;D

i call my recipe beer can quail. first i rub lemon juice over the quail, then season the quail, with a rub consisting of salt , pepper, tumeric, coriander, and spices of your choice. refrigerate for an hour or so. i use a stainless steel condiment cup, fill it with beer, stand the quail up over the little cup, on the grill. i prepare a marinade in a spray bottle, which consists of 1/3 redwine vinegar, 1/3 olive oil, and 1/3 apple juice. while the quail is cooking you spray it often with the mixture. while it is grilling i cover it with a stainless steel, clean, water bucket, like the ones my dogs drink water from. because it stands up on the grill, it cooks up nicely and evenly. we have cooked it right over a campfire as well. it is really good!

I literally soaked the quail in lemon juice, and then coated it with a mixture of salt (Salt with Attitude - by Green Farmhouse ;D) ), pepper, turmeric and a wacking good dose of Herbie's Chilli Hit. It was left in the fridge overnight. This morning it was placed on the "can" containing the white wine (maybe next time add some more herbs, etc. to the wine?).  The little green spray bottle was prepared with the 1/3 olive oil, 1/3 red wine vinegar, 1/3 apple juice (these little spray bottles are worth their weight in gold . . Uni suggested using them in her bread making class some time ago. .thanks, Uni!!  :-*)

Unfortunately, I didn't have anything to go over the top as  Smallfrey suggested so I just kept spraying it. :-))

Out of the oven and with a good squirt of lime juice, the taste for me was fantastic!!!  Thank you, Smallfrey!! :-* ;D

Good one GF, the little quail is perched on that can very precariously but obviously didn't jump off  :D

Last set. Thank goodness we had three for lunch. The plating here is pretty bad and you will not see the final balsamic glaze as I had put it on the table.

Stuffing made in the Thermomix as. was the syrup and glaze.

I doubt I will be cooking another quail for a while! They were all good but the marinated one was best. The slow cooked the easiest.

Thanks for that link, Gert.  It looks and sounds really good.  When there's a print version and a video (or tv version) I always like to compare the two - always interesting to see the minor - and sometimes major - differences between the two.  ;D

I have three quail left but ran out of time and energy . . ;D ;D  . . going to put those in the slow cooker and have them tomorrow - so thanks for that idea, too! :)
