Recipe Book Recipe Reviews / Egg Sambal - A Taste of Asia
« on: April 26, 2018, 08:07:16 am »
I was craving a sambal so gave this a go. Flavour wise this is very nice.

Although I feel like it needs to be made with fresh chilli not powder.
It kind of came out yellow-green colour due to the turmeric and onion when I know this dish should be red....so it was a bit off putting but the taste was correct. Will try with fresh chilli next time.

I just recently purchased this book and this is the first recipes I've tried. I quite liked the taste of how it turned out, (even nicer the next day cold) hubby wasn't quite as enthrawled (he's not a big fan of pumpkin). I think I'd change a few things next time around.

Even tho this recipe had a few steps to it, each one is very simple. After cooking the veggie "crust" for the specified time mine was still a little soggy, I think because I used the zucchini option instead of parsnip, and I used plain flour which doesn't soak up as much fluid as wholemeal. AND I've discovered my oven is a little slow to cook. So next time I'd make sure the crust is fully cooked before I layer the rest on.

The red onion layer is delicious...and anything with feta is a winner in general  ;D
Sorry the photo isn't the best...

That wasn't good timing NomesFog. Oh well, something to look forward to in the New Year.

I'm out of Oz for most of the year, 6 months at a time...so it's actually good timing Judy as I'm only waiting a couple of weeks...could have been MUCH longer!  ;D

I also ended up with glue! I haven't mastered it yet but it's on my to-do list. Most oer recipes I've looked at mention that the tapioca pearls need to be soaked before cooked...I think that might have been our down fall...

6
I found these to be a little heavy for our liking....in saying that its possible the flour is to blame...I've found Malaysian flour to be a bit different...it needed the toppings of maple syrup/honey and a added a don of butter for moisture...

I have my copy waiting at home for me...only problem is I won't be home til 7th Jan!  :( :-\ :'(  :'(
I can't wait!!!!!

Salads / Jamie Oliver inspired Chicken and Broccoli Salad.
« on: April 06, 2013, 07:18:43 am »
Was watching one on Jamie's 30 min meals episodes and this salad came to mind...his was just a broccoli side dish but I wanted mine to be a complete meal.

Slice 2 chicken breasts into 4 slices each, into varoma tray, steam for 15 mins, varoma, speed 3.
The last 6 minutes of steaming add to the varoma dish 1 head of broccoli cut into forets.
Chicken should be fully cooked but broccoli lighty steamed and vibrant green.
Drain Thermomix and set cooked items aside.
Put into tmx bowl
1 clove of garlic
Quarter red onion
40g EVOO
2 tomatoes
couple of big pinches of salt
1tbs umami paste (optional)

Chop 10sec/spd6. It should be a saucy paste.

Add the chicken and broccoli and chop 3 or so seconds speed 5. Or until its chopped to your liking  ;D

We really enjoyed this at lunch today. I think it would also be nice with the addition of some cashews or sunflower seeds too....to add a little crunch  ;)

Oh I forgot...here is a pic...not a great picture but it gives you an idea...

This recipe is just amazing!! Much better than the other Thermomix rendang recipes I've tried.
It's a lovely thick recipe with a devine flavour. Hubby has already asked for it to be a regular in our house.
Which is fine by me as its so easy! I followed the recipe exactly, except i only had half the amount of meat. the chillies I used were the longer ones so not so hot :)
10/10 from us  ;D

Tried this last night, I wasn't sure if I was meant to leave the butterfly in the whole time or not, but my chicken and veges weren't mixing very well so ended up taking the butterfly out and stirring in  :-: and it was much better.
Taste was ok, I think I'd add more veg and less noodles next time but that sad my own personal preference. Also a little more sauce  :)

Leftovers were great fried in a pan and then add a couple of eggs for a nice noodle omelette  ;D

I wasn't making the chicken rice but wanted a chilli dip/sauce to go with our stir fry. This was perfect!
I made a half batch as i didnt want a bit tub of it..
I only had super hot chillies so I only used a couple of them and used a red capsicum to make up the rest of the bulk.
It really was so delicious! Just like the chilli dip they serve in the chicken/pork/duck rice shops in Malaysia!

 :D

2nd time I've made this now and think its fantastic! Such a wonderful flavour...mind you I love a strong tasty curry not a watery one so the amount of spice for me was spot on! Teamed it with the cabbage and carrot sambhal page 138.... Delish!
Enough for the freezer too :)

LOVED this!
I made it as a side with the delicious Rogan Josh from the same book pg 98.
I didn't have any green mango so as suggested in the book I added more tamarind.
Will certainly be making this again!

Salads / Re: Quinoa Brunch Salad
« on: December 09, 2012, 04:05:31 pm »
Do you think this will be ok with white quinoa?  PAP you can get it in most supermarkets in the health food section.

Yeah you can use whatever colour you like, i find the coloured ones take a little longer to cook as the outer skin is a little more fibrous/chewy...and sometimes you need to soak the white one before cooking...from memory the quinoa from Tasmania...?
