Thanks Uni,

Made these last night with 200g of mixed seeds to replace some of the flour, they turned out beautifully!! Will be making again for sure  :)

Adjusting the size to 12 rolls to make it kid friendly and leave out bread improver. For the brush subs rice flour to normal flour. Beautiful!

Thank you Uni, you're so clever!  Very nice bread - great one in such a little time.  I freeze some, see how it goes.  Perfect size for school lunch box.

my winter method
pre heat oven at 75 F/F

add 300mls of water to bowl time 2.30mins, temp 50, speed  ^^
add  remaining ingredients  adding  the yeast  last
knead 4mins

trun oven off

shape and place in oven for 1/2 hour

Bake at 200C for 20 - 25 min and 5 min on the oven rack without the tray.

these rolls are 1/2 wholemeal and 1/2 plain white flour

I made these yesterday and they were so easy and delicious! Can someone explain what '5 on the oven' means though? I just cooked them for 25 minutes and that was fine.

My understanding - after you baked for 25 minutes, switch the oven off and leave it for 5 minutes in the oven.

I just took some of frozen bread from the other day and turn out beautiful for kids morning tea (sliced and toasted)

I have some of these on the first rise now Uni - it's been 10 minutes but the dough hasn't risen much at all.
Is that how is? I'm going to give it another 5 mins. It's nice and warm where I have the bowl.
