These are so easy , and good to use up some Sour Dough Starter. I fed the starter in the morning, left it on the bench all day and went out. While out I bought some crumpet rings as I think the normal metal egg rings are too small. The rings I bought are 'd.line' egg and crumpet rings, non stick and about 9 cm diameter. They were $1.79 for a packet of 2. I bought 2 packets. These are much better than the large silicon rings as they cook the edges of the crumpets as the base is cooking.
The recipe I used is from an English site, King Arthur Flour.
Ingredients. For 4 crumpets. Mix and cook 4 at a time.
1 cup, 250 mls of sour dough starter
I teaspoon of sugar
1/2 teaspoon salt
1/2 teaspoon carb soda.
Method
Oil a large non stick flat based frying pan.
Oil rings and place in frying pan to heat. Place rings so that the rim is outside .
Pour sour dough starter into a 2 cup jug. It will bubble up when the carb soda is added.
Add sugar, salt and carb soda. Give it a good stir.
Pour immediately into rings. About a 1/4 cup into each.
Cook over moderate heat for 7 minutes. You will notice that edges are starting to set and slightly pull away from ring.
When top has just set, the rings can be lifted off.
Flip crumpets to cook top slightly. Remove and cool on cooling rack.
Continue with above method. No need to re oil rings, but do brush oil on pan between batches.
Notes.
These do not taste sour.
Some were thicker than others. The very thick ones, I split before toasting. The thinner ones were toasted without splitting
Variations.
200 mls of starter, made up to 250mls with grated cheese, zucchini , green onion tops and parsley, pepper. Made 5 suitable for toaster.
Going to add grated apple and berries, same proportion.
Can use SD straight from fridge
Can make up 2 cups of mixture, if you have plenty of SD starter.

Chookie, this is already printed off and ready to go! I'd do them tonight if I had the rings . . .a quick trip to the shops!! Thank you for posting this . .

GF, much easier than using dried yeast. If my sums are correct, about 75 cents for 12 crumpets. Unreal!!

Verdict - very tasty
mine did stick to the crumpet rings, I did brush with macadamia oil, but it didn't help. Could be why I never use the rings.. They are wide 'non stick' ones with a folding type handle. Just reread your instructions Chookie, perhaps I was too impatient and turned early
I made 4 and with the remaining g mixture, added one finely chopped bacon rasher, 1/2 tomato, 2 small leaves of kale and some sweet chilli sauce and cooked as a savoury waffle. Lovely. Another SD keeper recipe.

Elle, I have used those rings without much luck. Mine were the silicon ones. Did you give the first side 7 minutes. .? The savoury ones sound nice. We had the cheese and zucchini ones with soup for lunch. Crisped up in toaster.
When cooked on the large metal rings, the rings lift off when the first side is cooked.

Hi Chookie, yes I set the timer for 7 mins. Taste was so good, but after studying your photos I am wondering if I will cook.a little longer on a lower heat. The non stick coating looks like it should work!
I did enjoy the waffle. It wasnt crisp, but the taste was good. Will try cooking a little longer for it as well. DH is at work, three spare crumpets in the freezer for him. He will be pleased

Have discovered that you can use SD starter straight from fridge.
Have also been making 2 cups at a time.
Have added above to basic instructions .

The waffle batter is a bit different. I think I have posted a SD waffle recipe somewhere. I would still give it a go to see how it turns out.
