I made a version of this dough today, using 270g vitasoy flour and 500g ordinary bread flour. I used the boiling water in the oven trick for the rising of the dough and it did take longer than the Vienna loaf time but rose really well. I found this was an easy dough to work with, mine wasn't too sticky. My oven decided to play up today though so the rolls were a tad doughy.  However, I've just come in and have cut up the small loaf for the freezer, testing the end piece with some butter and vegemite.  It is surprisingly good and is very light indeed.  I wonder how much better it would have been if the oven temperature was stable. Thanks astarra, a good one.

Thank you Astarra! I think this is the best bread I've made to date!  I think the heating of the ingredients is particularly good for cool/low humidity climates :)

Another batch today - into 17 buns... :)


....miss8 has just walked in from school, and said Öh yummy, mum's made buns again" and proceeded to eat one... ;D (or more!! ;) )

Tried this recipe yesterday - sorry forgot to take photo.  How fabulously simple and ready in no time.  Will certainly be making again.  Made two loaves yesterday - next time perhaps one loaf and some lovely soft rolls.  Thanks Astarra - I have been lazy lately and making bread in the bread machine but this recipe has me going again from scratch.

Made this today with 150 g wholemeal flour in. Added bit more water.
Two good loaves 30 mins in Aga.
