I called into Mum's on the way home from having lunch with Katie and she gave me an almost whole cooked chicken to do something with. A quick check through my box of TMX recipes and I came up with Cookie's
Chicken Macaroni Cheese
- this is the largest sized dish (2 servings) and I have 6 individual ramekins to share with Mum.

Mini sticky date cakes, with caramel icing for Mums Birthday
I made cupcakes from this recipe on taste.

....which I've made that recipe as a dessert cake for occasions, & it's fabulous. I just double the sauce recipe, and let sit to thicken.

Oh Maddy. Beautiful cakes , lucky Mum.
I'm going to have a go at making Paella today. Will make it on the stove before converting to TMX. Think the issue with making it in the TMX is the moisture of the rice. I have checked out a few recipes.

I cooked some honey/soy chicken wings for lunch and bought some in for Geoff, he is demolishing them as if hasn't eaten in days LOL. Getting some envious looks from the chap next to us but I'm not allowed to give food to other residents.

Stunning cupcakes maddy.
Lovely paella chookie. It's s regular in our house but I always make it on the stovetop. My favourite bit is the crust that forms on the bottom. You just can't do that in the tmx.
Something new I found on Facebook and made for dinner tonight. It's called Hackfleisch sonne which means minced meat sun.
