I've only been cooking for necessity lately...hopefully when DS finishes his nap I'll get into the kitchen and have a big cook up to prepare for the week ahead -there's no way I could.cook when he's asleep, he is a super sensitive sleeper 😯

I made another pinata cake for a friend's daughter yesterday. The kids just love when the lollies roll out!!!

Gorgeous cake Jamberie. I baked some raspberry and lime friands, quicker than a packet cake cupcakes gingerbread bickies and a birthday cake for DD. I made my quick mix choc cake and covered it in the Swiss meringue buttercream that I had in the freezer left over from the cake I made a few weeks ago. I made a strawberry purée and mixed it into the icing, and put sliced strawberries in the middle layer and topped it with leftover buttercream roses from the freezer.

Wow! ES that looks amazing!
I've never used Swiss Meringue Buttercream before. How would the end result differ from the creamy vanilla frosting?

Thank you for the lovely comments ladies! -as far as patience goes, being my second time around I had a few tricks that made it much easier. One of them was having my mum sitting next to me and turning the cake turntable for me ☺

I haven't had much luck with the creamy vanilla frosting in my Thermochef - maybe the shape of my bowl affects it. I tried the Swiss meringue for the first time recently and couldn't believe how easy and Yummy it was. http://www.superkitchenmachine.com/2012/18181/swiss-meringue-buttercream-thermomix-recipe.htmlIt was a little soft immediately after I mixed it up, but it was fine after it sat in the fridge for a while.  It also froze really well. I just defrosted it and put it back in the bowl with the butterfly attachment.

Those Swiss meringue bettercream roses look fantastic. Have you completed a course in this Emerald Sue? The cake looks too girceouse to cut into to eat.
