I managed to make some fruit mince yesterday. I used my Mum’s recipe that has no fat and uses cider.

Pesto sauce with coriander and parsley, to have with pasta tonight. For lunch made a white sauce added tinned salmon and vegetables with rice . Boiled eggs too . Trying to feed the DD before going back to boarding food .

I made the SD loaves from the fridge dough and they are rising. I also hope to make a fruit cake that was in the Diabetic Living magazine. I have had the fruit soaking for 3 days with grated apple. It doesn't have any sugar in it, and they say it will last for about 6 weeks.

Yesterday I made 6 jars of apricot jam, 3 jars of nectarine & raspberry jam, 4 jars rhubarb chutney.  My nectarine & raspberry jam boiled over and made a terrible mess, it took me ages to clean it up.

Using the thermomix or the stovetop Margaret?

No cooking here for a while but MM has been trying to fix the posting of photos problem I been having and wants me to try posting again.  These are the fruit mince pies I made for our last Probus meeting and the mini Christmas cakes for the nursing home trading table earlier this week.

Thanks Denise, I enjoyed making them as none of my family are into fruit pies/cakes so being able to make them for others was an opportunity too good to miss.
