I made a Classic loaf today using Laucke Stoneground flour. It’s very nice.

DD keeps making whipped coffee , it is huge on the social media pages . She started it by hand and I showed her a thermo one ! Would love to get some decaf coffee .

In my effort to use what I have in the pantry, I found 2 jars of ground coconut paste. I have been looking at a very limited range of ideas of how to use it. Biscuits, I think.  Something thin and crispy.
Also looking at Helen Goh’s Broccoli and Miso hand held pies.
Also Martha Stewart’s Cherry tomato Pasta.

We picked the last of the tomatoes yesterday.  Won't be sorry to see the lat of them.
Made another batch of relish and will get another lot ready for cooking tomorrow.

Zucchini slice from Cookidoo, used extra vegetables. We had left over minestrone soup as well .

I’ve made a batch of Chookie’s Hot Cross Buns. They are so much nicer than any others. We kept 6 and I took the others to a couple down the road. She is my age and he is in his late 80’s. She made us some spring rolls the other day and they were lovely.

The whipped coffee is nice but the sugar level needs to be less .
The kids are eating so much , I will have to buy a truck load of food at this rate.

I made a almond flour chocolate cake today, it was nice served with Tenina’s chia & berry jam and cream.

Cookie, your Hot XBuns look so much better than mine.  Glad you like them.
Yesterday made DD SD Rye and olive loaf.  Good result.
What I was really pleased with were the light and crisp Coconut biscuits. Now I know what to do with this unusual ingredient.  Next project will be the tins of Chestnuts.

Coconut cookies look great Chookie . So I decided that I would hold back on making too much at once of sweet food . But tomorrow I will need to make more so DS stops saying i’m Hungry. Need to fill him up not sure what to make , maybe date and coffee muffins and replace coffee with cocoa .

I am trying a new recipe every day.  Yesterday 2.  The Coconut biscuits above and a frozen yogurt recipe.  I haven’t made ice cream for ages as Ral devours it.  Not good for him.
 Mixed 200 g thickened cream,  slightly beaten, mixed with 400 g no fat plain yogurt and 90 g honey.  Freeze.
KAtie, the sugar content is a worry.  Savoury muffins are not so bad. I mostly don’t add sugar to stewed fruit and like Cookie usually reduce the sugar in recipes. I make a lot of sausage rolls for GS.  He knows they are half veggies.  I cook the cut up veggies in the TMX and mash them.  When cold add to the sausage meat. The teenage boys need a lot to fill them up.
