I experimented with a vegan, gluten free macadamia and cranberry cookie today, not a total success, but there are possibilities so will give them another go later in the week.

Made an Indian potato salad - it was absolutely a winner, so long as you are organised and have all the ingredients it is very quick and easy and incredibly tasty : https://www.theguardian.com/food/2021/jun/12/meera-sodha-vegan-recipe-south-indian-potato-salad-tamarind-coconut-cashews?utm_term=77b09658862b7bc2e3fb50d91aabe85f&utm_campaign=WordOfMouth&utm_source=esp&utm_medium=Email&CMP=wordofmouth_email if I were to type out the URL it would take longer than the cooking.

Thanks Marina, will check it out.  No cooking here today, too hot. Have boiled eggs and roast chicken in fridge. Lots of salad also.

That looks tasty Marina.
I've just taken a sponge out of the oven. It's DD's birthday tomorrow and I will turn it into something or other. She isn't into lots of cream. I didn't really want to put the oven on as the house is still hot. But for DD I was willing. DH is down at her place painting and finishing off the gates that go down the back. It's been a total fire ban here for several days so he hasn't been able to weld.

A piece of silverside cooked in the SC.  I cooked it down in the garage so as not to heat up the kitchen.  Also roasted a few more tomatoes in the AF.

I baked a new type of SD loaf today. I found the recipe on Facebook. It took 2 days and was ok, but I prefer the ones I make. It is very soft. I also put a few raspberries on DD’s Trifle cake.

Yes it was Judy. It's not too sweet at all. I reduced the sugar in the custard and the  top is mainly mascarpone with a bit of whipped cream folded through it. Not a thing of beauty as I had trouble upturning the set jelly and cake onto each other. I filled the spaces with the custard-as you do.

Frustrating not to be able to cook during hot weather. Some strategies I had developed    TMX plus. BBQ or AF or Bread Machine or SC and microwave.
I’ve been making  jar of salad dressing and keep it in the fridge. TMX Mayo mixed with fruit vinegar.  Use this on salad, cold slaw and rice.

We’ve been eating the goodies that I put in the freezer before Christmas. I will need to start making them again soon.
