Nothing here today. Yesterday I made some cupcakes that a thermomix consultant from Queensland has made available. The method was quite different. I wasn’t impressed until I had a taste and they were very nice. She usually puts up you tubes of her recipes but I couldn’t find this one.
May all dairy items in your fridge be of questionable vintage.

Nice little cakes cookie.

Yesterday Katie visited with a bagful of excess F & V from her weekly delivery.  I chopped and froze the huge celery, made this Creamy Turnip soup https://www.spendwithpennies.com/creamy-turnip-soup/ with the turnip, some of the potatoes and 1 of the apples.  I had it for lunch today and I was quite surprised with the taste. I use turnip (and Swede) in soups and casseroles but I’ve never made anything that made turnip the star.  I also cooked the mushrooms as per one lot of the instructions Marina posted recently for me and tomorrow I’ll add them to a risotto. Thanks Katie, your generosity knows no bounds and it was lovely to catch up again.

After my fun day yesterday I made a cake that had been recommended. It's Aunt Edna's Lemon Curd cake from Cookidoo. I made it as one cake. DH just called in for coffee (he is carting paving bricks for DD's place) and said it was nice. It made only a smallish large cake. (not very high). Next time I will double the recipe.

I found this Baby Risotto recipe online so I decided to use it so that I’m not left with huge amounts of the dish. 4 serves for a baby and I got 3 out of it for me - babies must eat a lot! https://www.bestrecipes.com.au/recipes/baby-food-risotto-recipe/3iajl7uq

I used frozen stir fry veggies and added 1/2 cup of cooked mushrooms from the recipe Marina posted. At first I thought I wasn’t going to enjoy the meal but it grew on me and wasn’t too hard to eat.  Thanks for your input Marina.

Cookie ,everyone doubles Aunt Edna’s lemon curd cake and I noticed on Cookidoo it has it as cupcakes . Great Judy , maybe you could use the recipes for two there is a thermo cookbook called dinning for two I’m sure .

It is Marina, a very slow process getting the right recipes though.
K Atie I do have that book and went to one of her cooking demos many years ago. Will have another look through it, I’ve made 5 recipes from it since I bought the book. I’d probably be better off looking through the Thermo baby cookbook again.

Inspired , made Edna’s lemon curd cupcakes . Doubled the recipe so made a dozen . So rich only had half for dessert.

Is Edna’s recipe similar to my Belgium lemon cake  recipe?
Roast chicken, sweet potato and carrot mash, roast potatoes and steamed Cauli, broccoli and green beans. Gravy.
