Chookie, your rolls made in the SRM look good.  How long did they take to cook?

Yesterday I made some vegan cup cakes for my GDs.

Mab, they take 10 minutes. I’ve found that I don’t need to do a double rise. Just leave at room temperature and start cooking.

I made Chookie’s mini rolls. A Cranberry and Walnut loaf which is delicious and some Butternut Snap Biscuits.

An excellent idea Chookie. I haven’t done it with my dough but I often do that with my SD starter.

Cookie, your bread always looks so professional. Lovely.
Yesterday I made the custard for the Portuguese Tarts and a couple of hours later realised I’d left out the cornflour. So back into the TMX added the cornflour a re cooked the custard. I’ll make the tarts today and see it the custard is ok.
Experimenting with proofing the bread dough in the Varoma, I use too much heat with the first lot. I park cooked the base of the dough. I tried kneading it back in by hand but it didn’t work. I chucked it all into the TMX added a little water and 1 teaspoon of yeast. Kneaded for 4 minutes and formed bread sticks. Worked!

Making Coconut butter cake adding the cream cheese butter icing from Spiced pumpkin mini loaves from Cookidoo . Wanted a cream cheese icing that didn’t have 250 of butter and cream cheese and 300 icing sugar so found this one .

I did a bit more preparation for going away. I made the meat part of Shepherd’s pie, a pumpkin fruit cake that has no sugar, butter or egg yolks. It’s really nice and some yo yo’s from this site. The yo yo’s are for a friend of DD’s whose wife is fighting stage 4 cancer. Not at all nice as they are fairly young.

DH made himself some flat breads with his Aldi machine. He prefers these to bread for lunch when we are away.

Enjoy your trip cookie.
Today I made potato & leek soup, a potato bake for the freezer for the kids’ next visit and cookie’s sago mango puddings from the forum. All these items were made using what I had on hand and needed to move some ingredients from the pantry and freezer. Earlier in the week I made a veggie soup to clear the crisper and had it every night until it was gone as my freezers are all too full again at the moment.

Made Portuguese bread In Dutch oven ,but for realised I was using wholemeal bread flour. Tested okay but not my favourite ,possibly better when it’s toasted, looks amazing though.
