No cooking today. Going to a movie with Probus. We are supplied with a lunch box. All for $24. I’ll go early and do some window shopping.

Nothing here today. DD filled the cake tin yesterday with Blueberry Muffins. They are rather nice.

Window shopping turned out to be real shopping. 2 tops and 2 slacks.
Better bake to be ready for installers next week.

I bought a packet of English muffins for my visitor’s breakfast so with those leftover I’m going to prep and freeze some muffin pizzas for my GS for when he has his mates over which is every weekend.

Had some pasta sauce in the freezer, used bacon and some Spicy Caramelised Onion from the fridge left over from some sausage rolls I recently made. Found some mozzarella in the freezer so no shopping trip needed for these.

Made Nagi’s Zucchini Pasta recipe https://www.recipetineats.com/pasta-with-creamy-zucchini-sauce/ and it wasn’t as nice as I expected it to be (that’s just my tastebuds though, I’m sure it is delicious). Silly me made the whole recipe which is a huge amount of food for one person so I’ve bagged it up and frozen it in 20 small packets as I intend using it up by adding it to Continental Chicken Noodle Soup which would be a nice warmer weather soup.

With 3 zucchinis left I made Zucchini & Risoni soup https://www.forumthermomix.com/index.php?topic=15362.msg357172#msg357172 adding 1/2 a carrot to make up the weight. My freezers are pretty full so goodness know where I’m going to fit this lot.

Marina I made your Flapjacks recipe today. I used molasses (we love the taste of it) and didn’t add any extra sugar. It tastes delicious. Thanks for the recipe.

Glad the flapjacks turned out well, Cookie.  I hadn't thought of using molasses but I would imagine that that would give a much deeper taste than sugar or maple syrup.  I'll remember that the next time I make them.

OMG Judy, you have been on a cooking binge. All looks good.
Roasted a chicken for visitor on Saturday night. Made leftovers into chicken and veg pies on Sunday. ( 3). Used roasted carcass for soup.
Also made Surprise Apple Pud , added Blueberries.
GS for Dinner tonight. Chicken Parma. Waffles .

Judy I have made this recipe several times now, It is easy to make and easy swallow.  I use thin spaghetti and break it into smaller pieces, I also leave out the corn.  DS likes it but DH is not a spaghetti fan  but will eat it if there is nothing else in the fridge.

Thanks Margaret, I also use the thin pasta (fettuccine egg pasta in rolls), I find this one best for me. On the odd occasion that I eat out I find normal pasta cooked al dente is really hard to eat. I thought about leaving the corn out and should have gone with my gut on that one. It was nice added to the chicken noodle soup for tea last night although I only added a half of what I had allowed per serve.
Lots of liquid seems to be the only way I can get things down. It won’t be wasted but will last me a very long time seeing how much it made. I did toss the other soup I made, I’m finding some of my favourite recipes are not palatable nowadays.

I had a whole chicken so I boned it and made Chicken Parma with the breast and thighs. I have par cooked them and will finish off in the AF. Very convenient.
