Thanks for thinking of me and sending the link, Margaret, I will have a look at it.  In return here is a fantastic (and very easy) vegan lemon dessert (my guests were licking their bowls!!), this recipe is from Vegan Richa https://www.veganricha.com/lemon-pudding/

I've just looked at your recipe mushroom wellington recipe, it looks lovely - anything with cranberry sauce gets my vote - I am a bit intimidated by the plait - we will have to see how brave I am feeling when I make it!

Marina I didn't worry about plaiting mine this year because the Borg's pastry was too hard to handle so just made it like a pastie.  GD didn't seem to mind.   Thank you for the Lemon Pudding recipe it sounds lovely and I will definately be making it.

Thanks KAtie. Gosh that’s a lot of December birthdays. DD was supposed to be a January girl but decided to turn up several weeks early. 😀😀

Mum always said in those days the husband never came in when you had a baby ! She sat up and asked for plum pudding after her first Bourne , my DS . Not wanting to miss out on Xmas dinner . I’d imagine that she was not home after me as I was exactly a week before Xmas ! Good for me is I always know what day Xmas will fall on .
Today was warm and windy lots of washing . DH DS are out harvesting the oats ! Cramming it in to get as much off as possible before the rain again !!

I made Marina's Vegan Lemon Pudding yesterday and it's very nice.  When I turned back after putting it in the fridge I found DH scraping out the TMX with the spatula.  His comment was gosh this is nice.   I'm sorry about the poor photos lately  I think I need a new phone with a better camera.

Yesterday I made roasted maple syrup carrot soup to restock the freezer as December was so cool that I managed to clear out all the packets of soup. https://www.delicious.com.au/recipes/carrot-maple-syrup-soup/67595d83-2933-4b9a-9927-9133c1fb1ee7

I also stewed some apples https://www.recipecommunity.com.au/desserts-sweets-recipes/stewed-apples/6hzs7hka-10c88-058361-cfcd2-mmw7iff2

and made half qty of the topping only from this site, blitzed it a bit to suit my needs and only used a tiny bit on the apples before freezing the rest. https://cloudykitchen.com/blog/apple-crumble/#tasty-recipes-9232-jump-target

With all this hot TV weather I had made the other day lemon and nectarine sorbet . Some needing to use up nectarines. Refreshing . But it hadn’t set when DS went to eat it that night , so we had melting sorbet !

It has been so hectic here this past week with visitors that I haven't put much up on this thread and my cooking has been quite different from my usual because it was food to be eaten straightaway instead of my normal meals which are frozen and taken down to the city to eat during the week.

DH gave me a book of Greek vegetarian / vegan recipes published from the Asylum Seeker Resource Centre so I made several of the recipes from there, including a fantastic Greek style salad, as well as another couple of recipes from blogs on the web that I hadn't visited for years - including one similar to Mexican refried beans but not fried - an easy and quick alternative.

I enjoyed having the time to leisurely find and cook new meals but will now have to revert to my usual "city" recipes and leave all my new recipes for our next holiday.
