I have made another batch of shortbread but not baked it. I put some more fruit in to soak for a cake.  Will pop it in the freezer when I make it.

Easy dinner with our neighbours tonight - Gado gado with teriyaki tofu (although, with this weather, soup would have been a better option!) followed by vegan tiramisu cups

I had a busy day cooking yesterday. I made a rolled, stuffed chicken, a terrine, potato salad, beetroot salad, bean salad, and a rice salad. Trifle, fruit salad and an Icecream cake.

Today I've made a Classic loaf, an Everyday Sourdough loaf from Cookidoo, muesli bars for the freezer and the last of the frozen Christmas Shortbread.

A few photos of some of the cooking I have done over the Christmas period.  I think I'm all cooked out now.

Marina, the vegan mushroom wellington maybe of interest to you.  I have noted on my copy of the recipe that the filling is particularly nice and our GD loved it.  The recipe comes from a site called Vegan on Board. https://veganonboard.com/vegan-mushroom-wellington/

Just a couple more.  There are a few more but I think that's enough.

Thanks for thinking of me and sending the link, Margaret, I will have a look at it.  In return here is a fantastic (and very easy) vegan lemon dessert (my guests were licking their bowls!!), this recipe is from Vegan Richa https://www.veganricha.com/lemon-pudding/

I've just looked at your recipe mushroom wellington recipe, it looks lovely - anything with cranberry sauce gets my vote - I am a bit intimidated by the plait - we will have to see how brave I am feeling when I make it!
