I never use pine nuts for pesto anymore. I prefer cashews or macadamias. Cheaper too.
May all dairy items in your fridge be of questionable vintage.

I started looking at all the pesto recipes, they vary a lot but some use sunflower seeds and green pumpkin seeds as well as cashews .

Inspired by Marina  I made Pesto today.  My basil plant has gone mad and I had some cashews in the freezer so why not use them up.  I also had found some cream left over from Christmas in the spare fridge in the garage so made it into butter.

Baking Brazilian cheese puffs. Trying lactose free Parmesan.
Baking a packet of banana cake mix. Adding a few changes to see how it goes.
Also trying curried cauliflower wings as I’ll have the oven going.

Added rum, sultanas and walnuts to a woolies GF  Banana cake mix. Pretty good. Took longer to cook but would certainly make again.
The Brazilian Cheese puffs, Lactose and Gluten free were also good.

It looks nice KAtie. Unfortunately my DH isn’t fond of coconut.
As my electricity won’t be reliable tomorrow I made rye bread, a Classic Loaf and some Banana Cinnamon scrolls.

Made a white bean dip. Thought I’d added too much garlic but when I had it under grilled salmon, it was perfect.
Also made pesto. Cashews and basil from garden.
Too hot for baking.

Marina, thank you for the recipe.  I have put it into my file of vegan cheese etc.

I cut up another lot of tomatoes and onion to make into chutney tomorrow.  I also roasted a large tray of truss tomatoes, onion & garlic for the freezer.

Thanks Marina for the link.
Made some home made Tomato soup, consisting of white beans, tin of chopped toms, fresh toms, garlic, carrot, celery chicken stock and lots of fresh herbs , and a small dash of maple syrup.from  I think this would be also good cold on a hot day.
Cooking roast pork belly for lunch, green beans, carrots and roast potatoes and pumpkin. Pear crumble.
