GS and friend for dinner. Turkey breast schnitzel, steamed small potatoes with lemon and butter and frozen peas. Pancakes with maple syrup and ice cream. I’m going out for lunch with Probus so won’t be eating much.
Also starting pea and ham soup.

Not really cooking but now I’m back home and feeling well again I’ve started eating lunch. Chookie sent me home with some of her sourdough crumpets, I used to love them so lunch today was a toasted crumpet with butter and vegemite, cut into small pieces and blitzed in the TMX along with a cup of hot Bonox. I really enjoyed it and could definitely taste the crumpet. Followed it up with a glass of freshly squeezed orange juice. Until I get to see a Dietician I’m just going to do my own thing from the ideas we used at Chookie’s place and some printouts I’ve done. Margaret I hope you’ve found the links I’ve sent you.

Judy, thank you for the links there are plenty of options there to try and I have already had your French toast idea twice and it was very nice.

Judy, Max was asking after you. I’m glad you enjoyed the SD Crumpet. Great idea mixing it with Bonox.
Yesterday I made a large amount of pea and ham soup in SC. Stacked full of veggies. Made garlic croutons in AF.
Mab, glad you enjoyed the French toast. I’m thinking Bread and Butter pudding might be nice.

Only one serve of the Pea and ham soup left. Had visitors and offered them lunch. It has been extra cold in Ballarat so this filling soup has been handy. Making another lot next week.

Baking 2 different scone mixes for tomorrow afternoon tea for 9 Probus ladies. Blueberry and Rosemary and Pumpkin and cheese and Australian Bush Spices. These will reheat well. Tomorrow, plain ones with Jam and cream.

I’ve made some very tasty Jam. Both Raspberry and Strawberry. I used cooked Quince juice as the base. Certainly added to emphasis the flavour.

The jams sound delicious Chookie. DD wanted some nice biscuits to take in for a friends retirement last week, so I made RTE Byron Bay cookies and instead of white chocolate put cranberries in. They were delicious.
May all dairy items in your fridge be of questionable vintage.

A friend gave me some nice creamy chicken soup so I had that for lunch and will have the last of my tomato soup tonight. This morning before going to gym I made a bottle of preserved apple for my best buddy there, she showed a lot of interest when I told her about it whilst over at Chookie’s. I also made an avocado chocolate pudding, 1/2 quantity for just 2 serves.

Judy I remember when Tenina launched her first book. Several of us went along. She made chocolate Icecream using frozen avocado. It was very tasty, but no one noticed that it didn’t completely melt. 😀😀😀😀

More pea and ham soup in SC.
Yesterday I made 8 jars of Cumquat marmalade and 4 jars of very hot sweet Chilli Sauce. I forgot to take the seeds out. It is VERY hot. The GC said , just right.
