Thanks guys.  It alstarted when I tried to buy some chicken tenderloins for the sushi and saw that a small packet was more expensive than a whole chicken.   :o

I'm also making an apricot and lemon curd as we speak.  See if I didn't have a TMX I'd have to be over the stove.

Foodiepep,  I put the carcass back in the TMX bowl and cook,  with water on 100 for 20 mins.  Makes good stock.
Today tested a new recipe, Baked Chicken and vegetable Lavash Rolls.   Have posted with photo.  DH does the taste test and gave them the thumbs up.

a batch of Cheese sauce, steamed some cauliflower and not wanting to waste the steam, cooked up a batch of rice below for the freezer. We are having weber roast chicken marylands/roasted root vegies, cauli-au-gratin & peas for tea.

How much water do you use chookie and do you place the carcass in the basket?
I admit that I have not made chicken stock  :-[  and we usually have at least 1 carcass per week  :P

Today I made a batch of vegie stock.. some bacon & cheese rolls.. a beef & mushroom pie.. and mashed potatoes.

Going out for lunch tomorrow and I am taking the bread.   Made a pumpkin loaf (inspired by Meagan) and a' no fuss' loaf with some soaked grain in it.  Also made a double lot of frozen Mango sweets,  only I freeze the mixture in a flat dish and slice it when frozen.  DH eats it between wafers.  Today's version  was blackberry and I had to cook and then strain the pips out. Yesterday I made some of JulieO's beautiful Cinnamon Rolls.

I have made quirkycookings mayo with success, and Isi's portuguese rolls which might I add are absolutely delicious! I have made rolls before but never had great success! It made 8 rolls- I had 1, DS1 had 2 and wants more, DS2 had 1 and wants another and DS3 was happy with his 1! They loved the mayo in it with chicken and salad.
Going to make dukkah for tomorrow and might make neverfail cupcakes. I'm making dessert for tomorrow and no idea what to do... Any ideas???

Only making Coleslaw tonight.

 I made coleslaw last night and was so chuffed with myself. Tonight I have pizza in the oven with the dough made in the TM. Go figure I am actually cooking. I haven't really bothered to cook in the last few years.

Oooooooooooooo!! Tonight I thought I'd attempt Nancy's Fried Rice being very skeptical & doubting it would taste any good!!!

And it was really, really, really nice!!! Even my husband liked it which is unusual because he's very fussy! And my children (aged 2 & 5) liked it too.

Yippeeeeeeeeee!!! Finally a savoury dish that they ALL approve of!!  :D

Today I've cooked .....

sweet potato and sweet corn soup (adapted from the pumpkin and corn soup)
chocolate chip scones
carrot cake (recipe from forum) gorgeous
and chicken with rice and vegetables from the Fast and Easy Cooking

The chicken was left on the carcass of the roast chicken we had on Sunday, I steamed it in the varoma to reheat - delicious and moist which is unusual for left over chicken ... :)

I love spending the afternoon in the kitchen and now feel all relaxed and fulfilled ... :)

It's Burns Night and should be eating Haggis,Tatties and Neeps but hey we're going out for supper to friends. ;D I did cook soup today nicknamed "Russian Rations" in our house :D And I put together the base for Lamb and Mushroom Curry to pop in the slow cooker with the diced lamb in the morning as I'm out all day.
