What were the mushroom burgers like, JD?  I nearly made them last week but made the spinach pie from the Rainbow Recipes book instead and I am still not sure what my thoughts are about it.  It did taste good with cranberry sauce and my DH had HP sauce with his.  The pastry was certainly very different to any I have made before and the recipe made a huge amount.  I think I would halve the silverbeet next time.

Also made the Chick Pea Mornay (I think that's what it was entitled), but as the pie was so large I put the mornay straight into the freezer and haven't tried it yet - maybe one day this week I'll get it out and see what it tastes like.

Made a huge pile of Sour Dough English Muffins.  Cookie I was thinking of you in the caravan as I made them, as they are cooked on the stove top.  They are split with 2 forks and then toasted. This provides the nooks and crannies to fill with butter and honey or poached egg.  Even the fussy grandchildren liked them.

Cuilidh, I only did half the recipe and that made 7 x 6cm patties.  We only had them for a light tea with crispy potatoes as we had had our main meal of the day for lunch.   Aileen obviously meant for these to go inside a hamburger roll with salad, mayo etc but serving them plain as patties I just heated up some leftover Chicken Moolie sauce (we are not vegetarians so can do this and it got rid of one of the many packets of different meat sauces I have in the freezer) which added some moisture to the patties. They were tasty and DH cleaned up his plate without complaints that there was no meat in them. I did saute the onion before adding everything else as I am not keen on raw onion in any patty.
I have spoken to Aileen re putting recipes on the forum if requested and she said she has no objection to a few as long as we run it by her first which I can respect. If I find a recipe that I feel is really exceptional, I will do that but for run of the mill recipes I wouldn't as those who are vegan have probably already got her book and if they haven't then perhaps they should.

Chookie they sound good. Especially as our next trip is in about 5 weeks and it will be cold.

Today I am mucking around with the sourdough recipe in the latest issue of Masterchef, I've made some biscuits and hope to do some ricotta.

Today I spent 7 hours in the kitchen right beside my trust TM who helped me all the way. I made a double batch of Lamingtons, double batch of choc chip cookies, Chocolate crunch, Muffins, Vanilla slice, sausage rolls, Pizza scrolls, cheese and bacon rolls and some herb and garlic dip.
If this doesn't keep the tribe happy then nothing will.  :o

Im hoping it will last till friday at least lol. I have been smacking fingers all day trying to keep everything for school and Work lunch-boxes, with 6 hungry mouths to feed they only get a couple feeds before its all gone. I made my cheese and bacon rolls into 12 today instead of 8 just to make them last a little longer (or will they just eat 2 instead?) :-\

Great cooking marathon dede.
I managed to fit in a steamed roly poly to my day's cooking. It was delicious. I'll post the recipe tomorrow.

Cookie I love you, roly poly was my favourite dessert when I was a kid and only my Grandma would make it for me. Unfortunately she lived in Perth and us in Geraldton so was a treat indeed  :)

I thought I did put it on the Forum but cant seem to find it either, So here it is

Chocolate Crunch

250g Butter
280g Self raising Flour
200g Sugar
2 Tbs Cocoa
100 g Coconut

Place butter in TM, cook 3 minutes,  100 Degrees, speed 3.
Place rest of ingredients in and mix 20 seconds, reverse speed 4.
Place into greased slice tray. Cook 15 minutes 180 Degrees.
Cool and ice with chocolate icing. Slice when set.

Very easy recipe to make and tasty as well
