I've been busy cooking for tomorrow. I wanted to made mum a lemon and raspberry layer cake, so I tried to convert a white cake, but it hasn't risen very much. I tried it a second time with a different method and a different ratio of ingredients. It worked better the second time, but it still didn't rise as high as I had hoped. However, I made a raspberry curd which had turned out well and I have layered it with whipped cream. The cake  now has 4 layers! I have crumb coated the cake and will decorate it tomorrow. I am going to try the creamy vanilla icing recipe tomorrow with some of the curd in it to turn it pink. Hopefully it will taste good.

I have also made Tenia,s pecan daiquoise cake from her new book. I am really pleased how it turned out, given my disastrous Macarons! It is all done and sitting in the fridge waiting for lunch tomorrow.

I also adapted her recipe for the beef and ale pie for my pressure cooker. That is in the fridge waiting for me to add the pastry tomorrow. I have also made JD's chicken and leek pie filling with a dollop of roasted garlic paste. I doubled the recipe, so I did it on the stovetop. My DH sampled (quite a lot of) it tonight and prefers it to the beef pie.

Frank would have loved it and even if he didn't he is smart enough to say nothing. Most men would not know the difference. My DH has no idea  what he is eating most of the time unless it is completely identifiable like a poke in the eye with a chicken leg.
