What sort of icing or frosting does anyone suggest.

Robyn
 :)

I always use the creamy vanilla frosting...beautiful for making swirls, and makes a good amount.
For other flavours, add around 50-70g blitzed jam or add cocoa (I omit the vanilla if adding other flavours)

Well after trying to squeeze them into the freezer, I have another thought.
Will cut one into slices and give them to mum for her freezer and give the other one to DD and SIL.

Why did you add a small amount of rice flour Uni?

So you just used it on the top Uni, not in the actual loaf?
