Today I've made another batch of vegetable stock concentrate, the QFITT Beetroot Smoothie, Lemon Myrtle & Coconut Icecream and the Sweet Beetroot Jam is in the TMX now.  I cleaned out the fridge this morning hence am trying to use up some of my fruit and veg.

I've just started another batch of Lemon Myrtle & Coconut Icecream - bought enough leaves back from Karen's for 2 batches so thought I had better made the second lot before they dried out.

Freezing most of it Uni. Will take mum some of each to freeze tomorrow when I see her, she is only a small eater and very conscious of what she eats. She was disappointed this year (going to the retirement village) that she wasn't able to do the city to surf. She has walked it every year for the past 12 years. Puts me to shame. At 76yrs old she is amazing.

Today I've just made CADA, berry muffins & choc chip cookies. I put most of the cookie dough in the freezer as I'm away over the weekend so won't have time to refill the cookie jar!

Yes Karen, I'd kept their stems in water.

I made these two-tone muffins today. I tried to use my new star-shaped muffin pans but I filled them too much. They just look like blobs with pointy bits ;D
